There’s nothing quite like the pairing of maple and bacon in a baked good. Everything from waffles, cinnamon rolls, scones…you can’t go wrong. We’ve always been fans of the maple-bacon flavor combo, but these Maple Bacon Muffins take it to a whole other level!

If you love a delicious sweet and savory breakfast, you’ll be obsessed with these! Make them for a breakfast on the weekend, a brunch with friends or as a yummy nighttime treat. They’re perfect for just about any time of day, actually. Once you make them…they’ll be so hard to resist going back for more! Happy baking!

Step 1: Fry the Bacon

First thing first…fry the bacon! This is by far our favorite step, because the smell of bacon always reminds us of waking up at our grandparents house. Anytime we make it, we can’t help but think about them.

It’s important to fry the bacon before putting it in the batter, because it creates those delicious, slightly chewy, slightly crispy bacon bits throughout the muffin. 

Once you’re done frying the bacon, just set it aside to add in later.

Step 2: The Dry Ingredients

Now it’s time to mix the dry ingredients together. In a large bowl, whisk together the:

  • Flour
  • Baking Powder
  • Salt

Step 3: Mix the Wet Ingredients

In a medium size bowl, combine the wet ingredients and sugar. Whisk until all the ingredients are incorporated together.

  • Eggs
  • Brown Sugar
  • Maple Syrup
  • Butter
  • Milk
  • Sour Cream
  • Vanilla

Step 4: Combine

Next, pour the wet ingredients into the dry, and mix until just combined. Add the chopped bacon bits to the batter, but save some to top the muffins with after they bake.

Step 5: Make the Streusel and Drizzle

To make the streusel, combine melted butter, flour, brown sugar, salt and cinnamon with your hands until it comes together and forms a crumble-like texture.

To make the drizzle, add powdered sugar, milk and maple syrup. Whisk until there are no powdered sugar clumps.

Step 6: Scoop, Top, Bake, and Drizzle

Finally, it’s time to bake the muffins! Place muffin liners in the muffin tin. Using an ice cream scoop, scoop the batter into the tins until they are all full. Sprinkle and gently press the streusel into the top of the muffin batter.

Next, bake the ovens for 20-22 minutes, or until a fork comes out clean through the middle. Let the muffins cool for 10 minutes, then drizzle the maple glaze over the top of the muffins and top with a few bacon bits.

Lastly, serve to your friends and family, and enjoy with a cup of hot coffee or tea.

Ingredients

Scale

Muffin Batter

2 cups flour

2 tsp baking powder

1/4 tsp salt

2 eggs

1/2 cup brown sugar

1/2 cup maple syrup

1/2 cup butter

1/4 cup milk

1/2 cup sour cream

1 tsp vanilla

8 pieces of bacon, fried and chopped into small bits

Streusel

2 tbsp butter melted

4 tbsp flour

2 tbsp sugar

2 tbsp brown sugar

1/2 tsp salt

1/2 tsp cinnamon

Maple Glaze

1 cup powdered sugar

4 tbsp milk

4 tbsp maple syrup

Instructions

In a large bowl, add flour, baking powder, and salt. Whisk the dry mixture until all the ingredients are incorporated.

In a medium size bowl, mix eggs, brown sugar, maple syrup, butter, milk, and sour cream together.

Mix dry ingredients into the wet mixture. Then gently fold in the bacon bits.

To make the streusel, combine butter, flour, brown sugar, salt and cinnamon.

Using an ice cream scoop or 1/4 measuring cup, scoop batter into a prepared muffin tin (you can grease the pan or add liners). Add streusel to the top of each muffin.

Bake on 350F for 20-25 minutes. Remove the muffins from the oven and let them cool for 10 minutes, then add the maple glaze and sprinkle a few bacon bits on top.

Enjoy with a hot cup of coffee or tea.
