How to Make Cheesy Chicken Bean Dip, Step by Step
Step 1: Preheat the oven and grease your baking dish.
Before you start prepping, preheat your oven to 350ºF to warm while you make the dip.
We also recommend greasing your baking dish at the start; that way, you don’t forget this step later on. The dip will fit perfectly in an 8×8-inch baking dish. Grease the pan with some cooking spray or butter and set it aside.
Step 2: Drain and mash pinto beans.
Start by making the bean layer. Wash and drain the pinto beans before mashing them. It’s important to strain out excess liquid from the can so that your beans aren’t too liquidy when baking.
Either mash the beans with a fork until smooth, or pulse them in a high-powered blender for a couple of seconds. You want to make sure they aren’t blended too thin.

Step 3. Make a cheesy chicken layer.
Start by softening your cream cheese. You can either leave the creamcheese on the counter for 20-30 minutes to soften, or you can carefully soften it in the microwave.
Mix together softened cream cheese and cottage cheese until your cheese mixture is smooth. Nexted add in shredded rotisserie chicken, ranch dip seasoning, garlic powder, green chilis and jalapenos.
This is where the tip starts getting good! Once your mixture is blended together, you can assemble the dip.
Step 4. Assemble dip in pan and bake.
Start by spreading your mashed beans in the bottom of the pan. Next, top with the cheesy chicken layer. This mixture will be thick, but don’t worry, it will soften as it cooks. Try to spread the cheesy layer as evenly as possible. Sprinkle the top with some shredded chicken and pop in the oven to bake.
Bake the dip in your preheated oven for 15-20 minutes until the top is bubbly and the cheese has melted. Let the dip cool for about 10 minutes before serving.

Can I Make this Dip Ahead of Time?
Of course! We just rececommend to bake right before you’re ready to serve.
Assemble the dip like you are going to bake it – bean layer, cheese layer, and top with shredded cheese – and wrap the baking dish in plastic wrap. You can keep the dip in the fridge for up to 2-3 days before serving. And when you’re ready to bake, pop it in a preheated oven and cook as instructed.
How to Store Leftover Dip
Store dip in an airtight container in the fridge for 3-4 days.

Ingredients
- 8 oz cream cheese
- 1 cup cottage cheese
- 2 cups rotisserie chicken, shredded
- 1/2 cup shredded cheddar cheese
- 2 jalapenos, chopped
- 1 packet of ranch dip
- 2 tsp garlic powder
- 4 oz can chopped green chilis
- 2 cans pinto beans, mashed
Instructions
- Preheat oven to 350ºF. Grease an 8×8-inch baking dish.
- In a large bowl, beat together cream cheese and cottage cheese until smooth. Mix in ranch dip seasoning and garlic powder until incorporated.
- Fold in shredded chicken, chopped jalapenos, and green chillis.
- In a separate bowl, add washed and drained cans of pinto beans into a bowl. Mash using a fork.
- Spread the mashed beans in a layer on the bottom of the greased baking dish. Spread the cheesy chicken mixture over the top of the mashed beans. Top with extra cheese.
- Bake in preheated oven for 15-20 minutes until melty and bubbly. Let the dip cool for 10 minutes before diving in.
