Description

A chewy vanilla chai-spiced blondie topped with a thin spiced powdered sugar glaze and finished with a sprinkle of chai spice.

Chai Blondie Bars

  • 1 1/2 sticks butter, melted
  • 1/2 cup white chocolate chips, melted
  • 1 1/2 cups brown sugar
  • 2 eggs + 1 egg yolk, room temp
  • 2 tsp. vanilla extract
  • 1 tbsp chai spice
  • 1 1/2 cups flour
  • 1/4 tsp baking powder
  • 1/2 tsp salt

Homemade Chai Spice

  • 1 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp white pepper (or black pepper)

Powdered Sugar Spiced Glaze

  • 2 cups powdered sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp cardamom
  • 3 tbsp milk
  • 1 tsp vanilla extract or vanilla bean paste


Instructions

  1. Preheat oven to 350ºF. Butter and line an 9×13 inch rimmed baking pan with parchment paper. Buttering and lining the dish makes removing the bars super easy.
  2. In a medium bowl, whisk together your dry ingredients – flour, baking powder, salt, and spices and set aside.
  3. In a small saucepan over low heat, melt butter and white chocolate chips. Stir frequently to evenly melt the chocolate. Wait until it is just melted and smooth before removing from the heat.
  4. Pour the melted chocolate mixture into a separate bowl and whisk in vanilla and sugar. Whisk in eggs and egg yolk, one at a time, until just blended together. Next, add the flour mixture and fold it into the batter with a spatula until the flour is fully mixed in. Careful not to overmix.
  5. Pour the batter into the pan and spread it into an even layer.
  6. Place in the oven and bake for 25-35 minutes until baked through. Use a toothpick or fork to test the doneness of the brownies. If your toothpick removes clean, the brownies are done. If not finished cooking, place back in the oven for 3-5 more minutes in increments.
  7. Remove from oven and let the blondies cool for 10-15 minutes.
  8. While brownies are cooling, make the spiced glaze. In a medium bowl, sift powdered sugar into the bowl. Add in maple syrup, milk, vanilla, and spices and whisk until smooth.
  9. When the blondies have cooled, pour the glaze over the top and spread it in an even layer. Dust the top of the bars with some extra chai spice for a garnish. Let the icing set for about 20 minutes before slicing.
