Peach Filling
- 4–5 peaches (sliced)
- 1 tbsp corn starch
- 2 tbsp coconut sugar
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- 1 tsp vanilla
Crumble Topping
- 1/4 cup coconut oil (melted)
- 2 tbsp coconut sugar
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 1 tsp vanilla
- 1/2 cup oats
- 1/2 cup flour
- 1/4 cup sliced almonds
Instructions
- Preheat oven to 375. Grease bottom of 9×9 inch pan or a pie dish.
- Peel and slice peaches into thin slices. In a medium bowl add the peaches, cornstarch, coconut sugar, maple syrup, cinnamon, cardamom and vanilla. Toss the peaches until the ingredients have coated the peaches. Set aside.
- In a medium mixing bowl, mix melted coconut oil, coconut sugar, maple syrup, cinnamon, cardamom, and vanilla. Add oats, flour and sliced almonds and mix together until crumble forms.
- Pour your sliced peaches into the prepared pan. Sprinkle crumble over the top. Bake for 35-40 minutes, or until the fruit is soft and bubbly.
- Enjoy hot with ice cream, greek yogurt or plain with a cup of coffee.
