Cinnamon Roll Almond Flour Thumbprint Cookies are a combination of two of the best sweets: cinnamon rolls and cookies! A soft cookie filled with warm cinnamon roll spread filling!
The weather is getting cooler here which means we are spending some more time indoors cooking and baking! We love this time of year and all the warm and cozy recipes that this time of year brings! We have been dying to get this recipe to you ever since we started experimenting with it last year. These cookies are a perfect treat and so easy to make, they take just a couple minutes to whip up before placing them in the oven. They pair perfectly with a warm cup of coffee or hot cocoa!
The Story Behind This Cookie
This recipe has been a year in the making!! We combined two of our favorite things into one recipe… cinnamon rolls AND cookies. We put a little twist on classic thumbprint cookies, normally filled with jams. These cinnamon roll almond flour thumbprint cookies are a perfect bite of sweetness. The soft cookie on the bottom resembles a shortbread cookie and is topped with the caramel-like cinnamon bun spread. They are delicious! You won’t be able to eat just one!
Around this time last year, we were shopping around Trader Joe’s and discovered a new seasonal item – Cinnamon Bun Spread!! Our minds were BLOWN! We couldn’t resist not trying it, but initially weren’t sure how we wanted to use the spread. One night we were craving a little something sweet after dinner and thought to use the spread in a thumbprint cookie. It turned into one of the yummiest and easiest treats to make!
This fall, when the Cinnamon Bun Spread was back in Trader Joe’s stores, we stocked up on several jars to work on perfecting this recipe! We are currently down to our last jar and the recipe is the best it has been!!

The cookie base resembles a shortbread cookie, but we wanted it a little more dense and didn’t want it too buttery tasting. It took a while to find the perfect combination that would pair with this caramel-like cinnamon bun spread. Sometimes, the cookie would end up too dry, other times the cookies would spread out too much and not resemble a thumbprint cookie.
Baking Ingredients in This Recipe
Almond Flour: In this recipe, almond flour functions similarly to all purpose flour in traditional baking. Almond flour can add a nice nutty flavor to baked goods.
Coconut Flour: Coconut flour is made from dried, ground coconut meat. It is higher in fiber, meaning the flour absorbs more liquid than alternative flours. Thus, it often needs more liquid to balance these effects so you don’t have a dry crumbly bread. We did not add much coconut flour in this recipe. The flour combination creates a nice balance of texture and density to the cookie.
Maple Syrup: We found that adding maple syrup vs honey or coconut sugar added the perfect amount of sweetness, without effecting the texture of the cookie too much.
Cinnamon Roll Almond Flour Thumbprint Cookies Recipe

Description
A dense shortbread cookie topped with a caramel-like cinnamon bun spread. A perfect bite of sweetness.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 3 tbsp butter (melted)
- 2 tbsp maple syrup
- 1/2 tsp almond extract
- 1 tsp cinnamon
- 1 pinch salt
- 1 1/2 tbsp cinnamon bun spread
Instructions
- Preheat oven to 350°F. Line a cookie sheet with parchment paper.
- While oven is preheating, make your cookie dough. Start by melting butter in the microwave or in a sauce pan over the stove.
- In a medium bowl, add melted butter, maple syrup and almond extract. Pour in almond and coconut flours, cinnamon and pinch of salt. Mix with a wooden spoon, until a dough is formed.
- Scoop and roll 1-inch dough balls and line on cookie sheet. Using your thumb, press into the center of each dough ball. (You may need to shape each one to form a nice thumbprint!)
- Place in oven and bake for 8-10 minutes.
- Once done baking and while the cookies are still warm, add ½ tsp of cinnamon bun spread to the center of each thumbprint cookie.
- Serve warm and enjoy! *Option to sprinkle with a little flaky sea salt, if you like salty sweet taste.
Notes
Almond extract: Almond extract is more potent than a vanilla extract, so make sure to measure out your almond extract for this recipe. It adds a great taste to the dough!
Flakey sea salt: We use Maldon Sea Salt. A little goes a long way and elevates the flavor of these cookies. It is a strong salty flavor perfect for sprinkling over baked goods!
