The dish is finished off with a sprinkle of almonds and a dusting of powdered sugar for that classic almond croissant vibe.

How to Make Almond Croissant Breakfast Casserole, Step by Step

Step 1. Mix together the sweet almond custard mixture. 

In a large bowl, whisk together eggs, milk, brown sugar, salt, vanilla, and almond extract until combined. The brown sugar adds a subtle sweetness to the dish while the vanilla and almond add more of that iconic almond croissant flavor.

Step 2. Slice and fill croissants with almond paste.

You can’t have an almond croissant without almond paste. Almond paste is typically made of ground almonds, sugar, egg whites and water, formed into a paste that is nutty and sweet. 

We are making this recipe super simple and using store-bought almond paste. You should be able to find this at your local grocery store on the baking aisle. Or you can easily order it on Amazon.

Slice each coissant in half lengthwise and fill the inside with a couple of tablespoons of almond paste. After each croissant is filled, cut each croissant in half horizontally. 

Step 3. Assemble Croissant Casserole and bake.

Pour the custard mixture into a 9×13-inch pan. Line the baking sheet with croissants, flat-side down. Once your pan is filled with croissants, brush the tops with melted butter and sprinkle with sliced almonds. 

Bake in the oven for 25-35 minutes until the custard is cooked through. 

Step 4. Allow time for the casserole to set. Dust with powdered sugar and serve!

Once the casserole is cooked through, remove the dish from the oven and let it set for about 10 minutes before serving. 

For a bakery-style finish, dust the tops to the croissant cassarole with powdered sugar.

Tips for Making Almond Croissant Breakfast Casserole

  • Cover croissants with foil to avoid burning. The croissants will brown and get crispier while they are baking, but to avoid burning, we recommend covering the dish with foil for the last 5-10 minutes of baking time so that the tips don’t burn.
  • If you can, use day-old croissants. They will be drier and will absorb more of the custard. The croissants will absorb any extra moisture, which will give you an even better texture.
  • Let the cassarole set for about 10 minutes after baking. This will allow the custard to firm up a bit before serving. As it sets, the texture of the dish will solidify and not be as runny.

How to Store Croissant Breakfast Casserole

If you have leftovers or are cooking ahead, you can refrigerate or freeze the croissant casserole after it’s cooked. And when you’re ready to use, reheat and enjoy. Here’s how we recommend storing croissant breakfast bake. 

Refrigerator: Slice and store leftovers in airtight containers for up to 3 days. 

Freezer: Make sure the casserole is cooled completely before freezing. Wrap the casserole in the freezer with a layer of plastic wrap, followed by a layer of foil to prevent freezer burn. The casserole will be good for up to 2-3 months.

Reheating leftovers

Chilled leftovers: Reheat in the microwave for 20-30 seconds, until warm.

Frozen leftovers: Preheat oven to 350ºF. Place frozen casserole in a baking dish or rimmed sheet pan lined with foil. Reheat for 8-10 minutes until warm to the touch.

Description

This almond croissant breakfast bake features almond paste-filled croissants baked in a sweet almond custard, topped with sliced almonds and powdered sugar. An easy breakfast casserole perfect for brunch, holidays, and feeding a crowd.


Ingredients

  • 10 croissants, halved
  • 6 eggs
  • 1 1/2 cups milk
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 810 oz almond paste
  • 1/3 cup sliced almonds
  • 1/3 cup powdered sugar


Instructions

  1. Preheat oven to 350°F. Butter a 9×13 baking dish and set to the side.
  2. In a large bowl, gently whisk eggs. Next whisk in milk, sugar, salt, vanilla and slmond extract and
  3. Pour egg mixture into the greased baking dish. Slice each croissant in half like a sandwich and spread 1-2 tbsp almond paste on the inside of each croissant. Slice each almond-paste-filled croissant in half and place them cut-side-down in the egg mixture, making several rows until the pan is full.  Brush each croissant with some melted butter and sprinkle the top with sliced almonds.
  4. Cover the baking dish with foil and place in the oven to cook for 25-35 minutes. Remove foil and bake for another 8-10 minutes until golden brown or until the egg is cooked all the way through. You can do the fork test to see if it is done. If your fork comes out clean, the dish is done.
  5. Sprinkle with a dusting of powdered sugar before slicing and serving. Enjoy!
