They’re the perfect bit of something sweet, salty and tangy. Each date is stuffed with a soft herby goat cheese, wrapped in smokey bacon and drizzled with honey. Once cooked, the dates taste caramel-like which balances out the rich cheese and the salty bacon. It’s a gourmet snack or appetizer -without the extra work!

- Dates
- Goat cheese
- Walnuts
- Thyme
- Bacon
- Honey
- Salt and pepper

Step-by-Step: How to Make Bacon-Wrapped Goat Cheese Stuffed Dates
Step 1: Pit and slice the dates.
If you can’t find pitted dates, you’ll need to remove the pits of the dates yourself. It’s super easy to do! Use a knife to carefully slice the date halfway through. Be careful not to cut through the date completely.
Pull open the date and remove the pit. Discard the pit and repeat this step for the rest of the dates. You should be able to make 20-25 dates.
Step 2: Mix together herby goat cheese mixture and fill the dates.
Mix together goat cheese, chopped walnuts and thyme until whipped and creamy. Fill each date with a couple teaspoons of goat cheese.

Step 3. Wrap in a bacon slice and drizzle with honey.
Wrap each date with slice of bacon and secure the ends by wrapping them underneath the bottom. You can also secure with a toothpick.
Line the sheet pan with dates, leaving 1 inch between each one. Drizzle the dates with honey before popping them in the oven.
Tip: If you’re using a thicker slice of bacon, you may need to slice in half to fit around the date.
Step 4: Bake until crispy and golden.
Bake the dates for about 20-25 minutes until the bacon is golden and crispy. Remove the dates from the oven and let them cool for about 10 minutes before serving. Best if served warm!

Storing and Reheating for Serving
If you are making the stuffed dates the morning or day before, let them cool completely before storing. Store in an airtight container for 3-4 days. To reheat in the oven at 350ºF for about 5 minutes or until warm.
For quicker option, you can also reheat in the microwave for about 20 seconds.

Description
These Bacon Wrapped Goat Cheese Stuffed Dates are the ultimate sweet and savory appetizer. Filled with creamy goat cheese, wrapped in crispy bacon, and drizzled with honey—perfect for holiday parties or easy entertaining.
Ingredients
- 20–25 dates
- 8 oz goat cheese
- 1/4 cup walnuts chopped and toasted
- 1 tbsp thyme
- 8–10 strips of bacon
- 2 tbsp honey
- Salt and pepper to season
Instructions
- Preheat oven to 400ºF and line rimmed baking sheet with parchment paper.
- Using an electric mixer with a whisk attachment, whip together goat cheese, thyme, salt and pepper.
- In a skillet over medium heat, toast chopped walnuts for a couple minutes until fragrant. Careful they don’t burn. Let them cool for a couple of minutes and fold into the goat cheese mixture.
- Fill each pitted date with the herby goat cheese.
- Tightly wrap each date in 1/2 slice of bacon, making sure the end piece of bacon is wrapped under the bottom side so it stays in place while cooking. Place each wrapped date on a parchment-lined baking sheet. Space them about 1 inch apart from each other
- Drizzle dates with honey and cook in oven for 20-25 minutes until bacon is crispy.
- Remove from oven and let them cool for about 10 minutes before serving.
