We’re from Texas, so Mexican food is our love language. With that said, we are also super picky when it comes to Mexican food. Someone has to make it just right for us to love it!

We grew up eating tacos just about every weekend, and if it wasn’t tacos, it was tamales. We are die-hard Mexican food fans. It will be out favorite type of food until the end of time, so why not share the love with you too?

These cilantro lime chicken tacos are so flavorful and fresh. The cilantro and lime are such vibrant flavors, and the tender chicken is so delicious, you’ll want to keep coming back for more.

What’s in this recipe?

Homemade tortillas: There’s nothing like homemade tortillas with your tacos. They take this recipe to the next level!

Chicken thighs or breasts: You can use chicken thighs or breasts for this recipe. Either taste amazing once marinated in the delicious cilantro lime marinade.

Cilantro: Cilantro is our absolute favorite herb. It adds so much fresh flavor to the tacos!

Lime juice & zest: Lime compliments the cilantro so well, and the fresh lime juice adds a tanginess to the chicken.

Salt & Pepper: Salt and pepper is a mus tin marinade.

Chili Powder: This adds some spice and heat to the chicken.

Cumin: This adds more depth and delicious flavor to the tacos. Cumin is a staple in any taco recipe!

Garlic Powder: We add garlic powder to just about everything, because it pairs so well with so many ingredients.

Onion Powder: This is another essential flavor to add to your marinade if you want the delicious taco seasoning flavor.

Oregano: A little bit of oregano made it’s way into this recipe, and it adds a subtle hint earthy herb flavor to the meat.

Olive Oil: Just a bit of olive oil is added to the spicy marinate so that it can permeate the chicken and add some more flavor.

Toppings: Some of our favorite toppings are avocado, guacamole, salsa, diced tomatoes, feta cheese, cilantro, and cashew queso.

The Cilantro Lime Marinade

The cilantro lime marinade is super simple to make and is an essential step to making these tacos super flavorful.

First, mix together the cilantro, lime zest, lime juice, spices and olive oil in a bowl. Place your chicken into the bowl and rub the marinade into the chicken. You want to make sure that the marinade covers all of the chicken, so we usually rub it into the chicken for about 30 seconds. 

Then, seal the bowl with plastic wrap and allow the chicken to marinate for 30 minutes-1 hour.

A tip to making the chicken even flavorful is to prepare the marinade the night before and allow the chicken to soak in the fridge over night.

After the chicken has marinated, transfer it to a hot pan and cook it until its internal temperature is 165F.

How to Make the Homemade Tortillas

The tortillas are also super simple to make and use very little ingredients. All you’ll need to make the tortillas is flour, salt, olive oil and warm water.

First, mix the salt and the flour together, and then stir in the olive oil. Add warm water and mix until dough forms. We find that it’s easier to use your hands to help form the dough.

Next, knead the dough for about one minute and shape it into a dough ball. Slice the dough into 12 equal sections (we like to slice the pieces just like we are cutting a pizza). You will then want to form the dough into small dough balls. Using a rolling pin, roll out the dough balls out very, very thin.

Cook the tortillas on a heated cast iron skillet for 2-3 minutes on each side. When the tortillas start to form bubble and turn a golden brown, that’s normally when the tortilla is ready.

Ingredients

Taco Meat

  • 4 chicken thighs
  • 2 tbsp chopped cilantro
  • 2 limes (juice and zest)
  • 1 tsp` salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp oregano
  • 1 tbsp olive oil

Tortillas

  • 2 cups flour (unbleached)
  • 1/2 tsp salt
  • 4 tbsp olive oil
  • 2/3 cup warm water

Toppings

  • diced tomato
  • avocado
  • guacamole
  • feta cheese
  • cashew queso
  • cilantro
  • salsa (regular or verde)


Instructions

  1. Prepare the marinade: Mix together the olive oil, cilantro, lime juice, lime zest, and spices in a bowl. Add the chicken thighs to the marinade and coat the chicken completely. Rub the marinade into the chicken for about 30 seconds. Allow the chicken to marinate for 30 minutes (or overnight in the fridge–see post above).
  2. Make the tortillas: While the chicken is marinating, cook the tortillas. Mix in salt and flour together
  3. Add in warm water and stir until dough forms (you can use your hands to make sure dough is firm) Kneed dough for 1-2 minutes and form a dough ball.
  4. Cut dough ball into 12 equal sections and form smaller tortilla dough balls. 6. Using a rolling pin, roll out the tortilla dough balls as flat as you can.
  5. Heat skillet on medium high heat and cook tortillas for 2-3 minutes on each side. You will know that they are done when their color starts to lighten and bubbles form in the dough.
  6. Cook the chicken: Take the chicken out of the marinade and transfer it to a skillet thats on medium/high heat. Cook the chicken on the skillet until its internal temperature is 165F.
  7. When the chicken is done cooking, transfer it to a cutting board. Using a fork, shred the chicken into pieces.
  8. Assemble your tacos: Start by laying a couple tortillas on a plate, fill with chicken and top with your favorite toppings
