How to Make One-Pan Curry Dumplings Step by Step

Step 1. Make the curry sauce. 

The sauce is very simple and all it takes is pouring everything in a skillet to simmer. 

In a skillet over medium heat, add oil, minced garlic, shallots and sauté until soft and fragrant. This is where things start to smell really good. Next,  stir in curry paste, paprika, ginger into the shallot garlic mixture. 

Lastly, pour in coconut milk and soy sauce and stir until you have a smooth sauce. The coconut milk will make the sauce super creamy and the soy sauce adds some saltiness. Make sure to use your spoon or spatula to scrape any bits that are stuck to the bottom of the pan. 

Step 2. Add the dumplings and bok choy.

Toss in chopped bok choy and drop the frozen dumplings into the skillet. Let them simmer there for a couple minutes before baking them in the oven.

Step 3. Bake until dumplings are crispy. 

Make sure your pot or skillet is oven safe. Bake in a preheated oven at 375ºF for 15-20 minutes. Let it cool for 5-10 minutes and garnish it with lime slices, chopped green onion and chili oil. 

Baking the dumplings will make them a little crispy on top, but the sauce is going to keep them soft and moist. Make sure your skillet is oven-safe. We love using cast iron skillets because it’s so versatile and safe to use on stove top and the oven.

How to storing and reheating curry dumplings

Ingredients

Units Scale
  • 1 package frozen veggie dumplings
  • 5 cloves garlic, minced
  • 3 shallots, minced
  • 1 piece ginger, minced or grated
  • 1 can coconut milk
  • 2 tbsp curry paste
  • 2 tbsp rice vinegar
  • 3 tbsp soy sauce
  • 2 cups bok choy, chopped
  • 2 tsp paprika
  • 1 lime

Toppings: green onions, Chile oil, lime slices, basil


Instructions

  1. Preheat oven to 375ºF.
  2. In a skillet over medium heat, heat oil, minced garlic, shallots until soft and fragrant. Stir in curry paste, paprika, ginger.
  3. Pour in coconut milk and soy sauce and stir until all bits are scraped off bottom of pan and curry paste is mixed in.
  4. Place 2 cups bok choy and dumplings into the sauce. Sprinkle lime juice over top of the dumplings.
  5. Bake in preheated oven for 15-20 minutes until the tops of the dumplings are crispy. Let is cool for 5-10 minutes and garnish with green onions, chili oil, basil and lime slices. Scoop out dumplings and extra sauce into each bowl and enjoy!
