What Makes These Healthy Apple Cinnamon Muffins Incredible?
We have spent almost a year perfecting a basic muffin recipe that is ‘fool proof’.
At least once a week, we would make muffins, until we found the perfect combination of ingredients to achieve the right texture. We incorporated natural ingredients fluffy muffin each time. We also wanted to make a recipe that had whole food ingredients and zero refined sugar.
The base recipe of these muffins (without the apples) is so incredible. You can substitute any type of fruit or nuts in these muffins to make delicious pastry. Some examples of fruit and nut mixes to substitute are:
- Blueberries
- Blackberries
- Strawberries
- Raspberries
- Pumpkin
- Peaches
- Pears
- Walnuts
- Almonds

The warm spices and tart apple flavor come through! Some muffin recipes can be so filled with sugar, that they can leave a bad aftertaste in your mouth. These muffins are rich in flavor, from the oat flour, spices, and natural maple syrup. The flavors of the ingredients are so wholesome and compatible, the natural flavors are accentuated through cooking.
These muffins have the perfect amount of sweetness! Even without the addition of fruit or a crumble on top, the maple syrup adds the right amount of sweetness. These muffins have no refined sugar, so, that means no sugar crashes after breakfast!

How to Make Tulip Parchment Paper Liners:
- Cut 5″ x 5″ squares of parchment paper. We use Reynold’s Parchment Paper, because it has grid lines printed on the paper. This will help you measure and cut your liners more precisely.
- Once all your parchment pieces are cut, place the paper into the muffin. Use the bottom of a 1/4 cup measuring cup to press the liners into the muffin molds. This will help give the liners shape before you pour the muffin mix.
- Pour your batter into the muffin liners. They will come out looking gorgeous!

Description
Easy fool-proof healthy muffins! Super fluffy, filling and have a perfect balance of apple and cinnamon spice flavor. Perfect for breakfast on the weekend or meal prep breakfasts for the week!
Ingredients
- 1 1/2 cup gluten-free oats (blended for oat flour)
- 1/2 cup tapioca flour
- 1 tsp baking powder
- 1 tsp baking soda
- pinch salt
- 1 tsp cinnamon
- 2 eggs (beaten)
- 1/4 cup maple syrup
- 1/4 cup olive oil (extra virgin)
- 1/3 cup almond milk
- 1 apple (chopped into small pieces)
Instructions
- Preheat oven to 350°F and line muffin tin with liners or DIY tulip liners (Instructions above, in blog post!)
- In a high powered blender, blend oats until flour consistency is achieved.
- In a large bowl, add oat flour, tapioca flour, baking soda, baking powder, salt and cinnamon to a bowl. Whisk together.
- In a medium bowl, add eggs, maple syrup, olive oil, and almond milk. Mix until wet ingredients are combined.
- Add wet ingredients to large bowl with dry ingredients. Fold wet mixture into dry mixture. Fold until mixture is blended together. You should not see any dry ingredient pieces. Do not over mix.
- Add in chopped apple to muffin batter and fold apples into mix.
- Pour batter into muffin tin. Batter should fill 3/4 of each tin.
- Place in oven and cook for 20 minutes.
- After cooking, remove from oven to cool for 10 minutes. Serve warm and enjoy!
Notes
Folding mixture: To fold the muffin mixture, take a rubber spatula and scoop the mixture. Fold over and continue this motion until all ingredients are incorporated.
