Today we’re sticking with a classic: Morning Glory Muffins.
They’re not super sweet and packed with lots of yummy flavors and textures. Made with a spiced batter, shredded carrots, raisins, coconut flakes, apple chunks and walnuts. These morning glory muffins make a great breakfast or even an on-the-go snack.
Muffins were created to make cake acceptable for breakfast! If you’re new here, you will find out soon that we are big fans of muffins. We make them practically everyweek and share some of our favorites with all of you on the blog!
Our muffin batter took us several years to perfect because we were very particular about the type of muffin we wanted to be a signature. We wanted create something that was like going to your favorite bakery, but something that you could make at home. The muffin had to dense yet still have a light crumb. The day we found the perfect combination of ingredients, we had people asking us for the recipe. So now every time we perfect a new flavor, we have to share for you all to try!

What you’ll need for bakery-style muffins
All-Purpose Flour: We always use unbleached, all purpose flour when we’re baking muffins, breads, and cookies.
Baking Powder: The baking powder helps the muffins puff and rise.
Sugar: Sugar adds sweetness and flavor to the carrot cake muffins.
Butter: Everything is better with butter. We recommend using unsalted butter for this recipe.
Milk: A little bit of milk is added to the muffin batter for moisture.
Sour Cream: Our “secret sauce” that makes our muffins so dense and delicious is the sour cream. It adds a wonderful flavor and texture to the muffins as well.
Vanilla: Adds a nice flavor to the batter.
Walnuts: Add an extra crunch and yummy flavor.
Granny Smith apples: Finely chopped granny smith apples add moisture and texture to the muffins. The fresh fruit also adds a fresh flavor to the muffins.
Carrots: Shredded carrots are the only way to go with this recipe. Use 2-3 large carrots and shred by hand. Carrots will also add moisture to the muffins.
Raisins: We used brown Thomson raisins. If you want to use golden raisins you can, they just seem to have a sweeter flavor which we didn’t prefer in these morning glory muffins. No matter what you choose, it will taste delicious!
Coconut flakes: We used unsweetened coconut flakes.
Orange zest: Orange zest will make the other flavors in the muffin pop!
What makes muffins bakery-style?
There are three things we have found most bakery-style muffins have in common: they are typically very decadent, dense and top-heavy and are often topped with streusel or a yummy glaze. We have tricks to make sure you can make bakery style muffins at home that check all the boxes.
- Dense muffin & soft crumb: The easiest way to make a denser muffin is to adding sour cream. It keeps the moisture in the muffins but adds a density to the batter. Which means you still have a soft crumb too.
- Streusel topping: These morning glory muffins have a lot going on inside and so we didn’t add a streusel topping. But if you’d like to add a streusel, grab the recipe from our white chocolate pecan or espresso chocolate chip muffins
- Hot oven temp to start: Baking at a hot temperature to start helps to create a pretty raised muffin top like you see on muffins at your local bakeries. You will only cook at a hot 425ºF for 7 minutes until decreasing the temperature to 350ºF to continue baking.
How to make perfect bakery-style morning glory muffins…
Making muffins is probably one of the easiest and least technical ways to make bread. The simplicity of making them is one of the reasons we love muffins so much. We also have way too much fun experimenting with flavors.
Before you start making morning glory muffins, measure out and chop everything we need to mix together. This way you know you have exactly what you need.
Start by preheating the oven to 425ºF and measuring out the dry and wet ingredients in two separate bowls. In the dry ingredients bowl, you will have a mixture of flour, baking powder and spices. In the wet ingredient bowl, you will whisk together eggs, sugar, butter, milk, vanilla and sour cream. The sour cream is going to provide density and extra moisture to the eggs.
Next combine the wet with the dry and mix until just combined. You want to be sure not to over mix because the batter will become tough. Next you will add in all the yummy mix-ins that make morning glory muffins so delicious – carrots, raisins, granny smith apples, coconut, walnuts and orange zest.
After you make the batter, fill a muffin tin with cupcake liners and scoop the muffin batter with an ice cream scoop to fill the muffin tins.
At this point, your oven should be preheated to 425ºF. That temperature may seem a little high for baking muffins. It is! But it is important to make that beautiful muffin top that is common in bakery-style muffins. You will only bake at this high temperature for about 7 minutes before dropping the oven temperature to 350ºF to cook for the remainder of time.
Lastly, you will remove them from the oven and cool for a couple minutes. They are best if served warm from the oven with a cup of tea or coffee!

Bakery Style Morning Glory Muffins
Description
Spiced muffin batter, shredded carrots, raisins, coconut flakes, apple chunks and walnuts.
Ingredients
2 cups flour
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
2 eggs
1/2 cup granulated sugar
1/2 cup butter
1/4 cup milk
1/2 cup sour cream
1 tsp vanilla
1 tbsp orange zest
1 cup shredded carrots
1/2 cup raisins
1/3 cup shredded coconut flakes
2 granny smith apples, peeled and diced
1/2 cup walnuts, finely chopped
Instructions
- In a large bowl, add flour, baking powder, salt, cinnamon, nutmeg, clove and ginger. Whisk the dry mixture until all the ingredients are incorporated.
- In a medium size bowl, mix eggs, sugar, butter, milk, vanilla and sour cream together.
- Mix dry ingredients into the wet mixture. Then gently fold in shredded orange zest, carrots, raisins, apples and coconut.
- To make the streusel, combine butter, flour, brown sugar, salt, and cinnamon.
- Using an ice cream scoop or 1/4 measuring cup, scoop batter into a prepared muffin tin (you can grease the pan or add liners). Add streusel to the top of each muffin.
- Bake on 425°F for 7 mins then on 350°F for 10 more minutes.
- Remove the muffins from the oven and allow them to cool for 10 minutes.
- Enjoy with a cup of coffee. Serve to your family and friends.
