We are bringing back a yummy past time, perfect for Fourth of July gatherings and any summer get together – FRUIT PIZZA! This recipe that has been in our family for decades. Even though it is somewhat of a past time, classics never seem to go out of style. They just seem to be reimagined and modernized. This Fourth of July Fruit Pizza is no exception. A sugar cookie crust, topped with citrus cream cheese frosting and fresh fruit makes a perfect chilled summer dessert!

The Inspiration Behind the Recipe

We are so excited to share this recipe today. It is one that brings back so many memories to us as kids. Every summer, our mom would have summer parties and make this fruit pizza. If you have never had fruit pizza before, you truly are missing out!! It is the perfect combination of tart and sweet, that always hits the spot.

We used a family recipe for the cookie dough base (we are sharing it with you today), but if you are shorter on time, a store-bought role of cookie dough works just as well!

For this recipe, the toppings are so versatile. Choose whatever fruit is your favorite. We wanted to go with the patriotic, Fourth of July theme and chose red and blue berries.

What’s in the Fruit Pizza?

Almond extract: Adding almond extract to the sugar cookie crust was the best decision. Our family’s sugar cookie recipe didn’t originally call for the addition of the almond extract, however it adds a delicious flavor to the cookie layer.

Cream cheese: The cream cheese layer might be our favorite of them all. The cream cheese balances the sweetness of the sugar cookie and the flavor punches from the fruit. It adds a rich, creamy and tangy flavor that ties this beautiful fruit pizza together.

Strawberries, blueberries and raspberries: Not only do the colors of the fruit match the festive colors of the holiday, but they taste amazing on top of the fruit pizza.

Bake it in a Pie Dish

This recipe makes enough for 1 large fruit pizza on a sheet pan or 2 smaller fruit pizzas in 8″ pie pans. We recommend topping this cake with berries, mandarin orange slices, kiwi, grapes, bananas, peach or mango.

Description

This festive fruit pizza is a perfect dessert for any summer gathering. Sweet sugar cookie balances the tartness of some of the fruit and cream cheese.


Ingredients

Sugar Cookie Crust

  • 3/4 cup butter ((1 1/2 sticks of butter))
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 1/2 cup flour
  • 1 tsp baking powder
  • tsp salt

Cream Cheese Icing

  • 8 oz cream cheese ((I used low fat for this recipe))
  • 3/4 cup powdered sugar
  • 1 tsp orange zest

Toppings

  • Fresh strawberries, blackberries, blueberries, raspberries


Instructions

  1. Preheat oven to 350 and prepare baking dish. Grease a pie dish with a little butter, making sure to the whole pan is greased, even the edges.  *
  2.  In a medium bowl, mix together your dry ingredients – flour, baking powder and salt. Set dry ingredients aside to be added later.
  3. In an electric stand mixer with the paddle attachment, cream together butter and sugar until fluffy, about 3-5 minutes.
  4. Add eggs, vanilla and almond extract to the creamed butter and blend until combined.
  5. Add in dry ingredients until just combined.Scrape edges and blend to make sure everything is incorporated. It is important to not overmix.
  6. Once you have formed the dough, evenly press the dough into the pan and place in the preheated oven. Cook for 15-20 minutes. The sugar cookie crust should be a light golden color.
  7. Remove from oven and let cool. This could take 30-40 minutes to cool completely.
  8. While the cookie crust is cooling, make your cream cheese icing.
  9. In the stand mixer with the whisk attachment, combine cream cheese, powdered sugar. Mix until combined icing is light and fluffy. Mix in orange zest at the end.
  10. Decorate your pizza. Spread a layer of cream cheese icing over the top of the pizza.
  11. Assemble the toppings. This is where you can get creative with decorating. **
  12. Slice, serve and enjoy!

*You can make this in a sheet pan as well.

**Toppings: You can swap out fruit toppings with your favorite fruits. We recommend berries, mandarin orange slices, kiwi, grapes, bananas, peach slices, mango.
