Roasted Zucchini and Carrots Sheet Pan Dinner
Healthy sheet pan dinners are a great option for any night of the week! You can change up the vegetables you cook every time, which makes this dinner a winner for multiple nights of the week. We start with cutting the vegetables and seasoning them.
For this recipe, we are using zucchini, sweet potato, carrots bell peppers and onions. This is our favorite mixture of vegetables, because of the variety of flavors and nutrients.
Next, we whisk the seasoning and melted coconut oil together. This will help spread the seasoning evenly over the vegetables.
Lastly, pour the seasoning mixture over the vegetables and toss the vegetables together. Now you have a beautiful pan of vegetables that are ready to be roasted in the oven!
After 25-30 mins in the oven, this meal is ready to eat! It’s beautiful, delicious and so healthy!

- Total Time: 40 minutes

Ingredients
- 1 large sweet potato
- 1 zucchini
- 3–4 tricolored carrots ((feel free to use regular carrots as well))
- 1/2 onion
- 5–6 mini bell peppers
- 1/4 cup coconut oil ((olive oil is great too!))
- 1 fresh clove of garlic, diced
- salt + pepper to taste
- 1 tsp thyme
- dash of red pepper flakes
- 3 tsp Trader Joe's Umami Seasoning (optional)
Instructions
- Preheat oven to 425 F degrees.
- In a small mixing bowl, whisk together the oil and spices.
- Using a cutting board and sharp knife, chop the vegetables and place them on the large baking sheet.
- Pour the seasoning mixture over the vegetables and toss to evenly spread the seasoning around.
- Bake for 15 minutes. After time is up, toss the vegetables. Roast for another 15 minutes.
