- 2 cups rolled oats
- 3/4 cup coconut sugar ((If you don't have coconut sugar, you can use brown sugar as well.))
- 1/3 cup pecans
- 1/3 cup walnuts
- 1/2 cup raisins
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 2 cups almond milk (Alt: milk or other milk alternatives)
- 2 vegan eggs
- 1 tsp vanilla
- 4 tbsp vegan butter
- 1 apple, chopped ((I have used granny smith and fuji. Both work well but I prefer the more tart granny smith flavor!))
- 1 pear, chopped
Instructions
- Preheat the oven to 375°F.
- Grease a 8×8 baking dish with butter.
- Combine your dry ingredients, oats, coconut sugar, half of the nuts (the other half will be for the topping), raisins, baking powder, cinnamon, salt in a medium bowl. Stir the ingredients together until they are incorporated.
- In a separate medium bowl, whisk eggs first. Add milk and vanilla and whisk into eggs until combined.
- Add your wet ingredients to your dry ingredients. With a rubber spatula stir in melted butter and mix just until wet and dry ingredients are blended together.
- Place chopped apples and pears at the bottom of the greased baking dish. Pour the oat mixture over the fruit and spread evenly. Sprinkle the rest of the pecans and walnuts on top.
- Bake in oven for about 40-45 minutes. Each oven may cook differently, but the top of the oatmeal should be golden brown when done. Let cool for 10 minutes. We recommend serving the oatmeal warm out of the oven!
