Description
Crispy frozen veggie dumplings simmered in a creamy coconut curry sauce with chopped box choy, drizzled with chili oil and lime juice.

- 1 package frozen veggie dumplings
- 5 cloves garlic, minced
- 3 shallots, minced
- 1 piece ginger, minced or grated
- 1 can coconut milk
- 2 tbsp curry paste
- 2 tbsp rice vinegar
- 3 tbsp soy sauce
- 2 cups bok choy, chopped
- 2 tsp paprika
- 1 lime
Toppings: green onions, Chile oil, lime slices, basil
Instructions
- Preheat oven to 375ºF.
- In a skillet over medium heat, heat oil, minced garlic, shallots until soft and fragrant. Stir in curry paste, paprika, ginger.
- Pour in coconut milk and soy sauce and stir until all bits are scraped off bottom of pan and curry paste is mixed in.
- Place 2 cups bok choy and dumplings into the sauce. Sprinkle lime juice over top of the dumplings.
- Bake in preheated oven for 15-20 minutes until the tops of the dumplings are crispy. Let is cool for 5-10 minutes and garnish with green onions, chili oil, basil and lime slices. Scoop out dumplings and extra sauce into each bowl and enjoy!
