A super simple, refreshing iced coconut coffee. This drink is the best summer coffee recipe and is filled with coconut flavor and the perfect hint of sweetness.

- 2 shots espresso ((if you don’t have an espresso machine: 4–6 oz of strongly brewed coffee))
- 1 cup ice
- 8 oz unsweetened coconut milk beverage
- 2 tsp honey
- 1 tsp vanilla
Instructions
- Before you brew your espresso, drizzle honey and vanilla in the bottom of your glass.
- Brew your espresso. For this recipe, I like a stronger coffee flavor, so I add two shots. If you are using brewed coffee, make a strong brew of about 4-6 oz.
- Using a spoon, stir the espresso honey mixture.
- Add ice to cup and pour in coconut milk.
- Stir with straw and enjoy!!
