Maple Bacon Buttermilk Waffles

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 3/4 cup buttermilk (*see notes for homemade buttermilk)
  • 6 tbsp butter
  • 3 tbsp maple syrup
  • 6 slices cooked bacon (finely chopped)


Instructions

  1. Plug in and preheat waffle maker while you start making your batter. 
  2. First start by cooking your bacon. Using a skillet over high heat, place 6 strips of bacon into the bottom of the pan. Cook until strips have turned darker brown and are a bit crispy. Remove from heat once cooked to allow to cool. You will also want to pat the bacon strips with a paper towel to remove excess grease before adding to your batter.
  3. In a large bowl, whisk together flours, baking powder, baking soda, cinnamon and salt. 
  4. In a separate, medium sized bowl, whisk together eggs, buttermilk, melted butter and maple syrup. 
  5. Pour your wet mixture into your dry mixture and mix until you can’t see any large clumps of batter. It should look pretty smooth. 
  6. Add your 6 slices of cooked chopped bacon and fold into your batter. 
  7. Grease waffle maker with cooking spray!Using a 1/3 cup as a scoop, scoop batter into preheated waffle maker. Cook until waffles are golden brown. Repeat this step for the remaining waffles. 
  8. Serve hot topped with butter, maple syrup and extra bacon crumbles.
