- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 3/4 cup buttermilk (*see notes for homemade buttermilk)
- 6 tbsp butter
- 3 tbsp maple syrup
- 6 slices cooked bacon (finely chopped)
Instructions
- Plug in and preheat waffle maker while you start making your batter.
- First start by cooking your bacon. Using a skillet over high heat, place 6 strips of bacon into the bottom of the pan. Cook until strips have turned darker brown and are a bit crispy. Remove from heat once cooked to allow to cool. You will also want to pat the bacon strips with a paper towel to remove excess grease before adding to your batter.
- In a large bowl, whisk together flours, baking powder, baking soda, cinnamon and salt.
- In a separate, medium sized bowl, whisk together eggs, buttermilk, melted butter and maple syrup.
- Pour your wet mixture into your dry mixture and mix until you can’t see any large clumps of batter. It should look pretty smooth.
- Add your 6 slices of cooked chopped bacon and fold into your batter.
- Grease waffle maker with cooking spray!Using a 1/3 cup as a scoop, scoop batter into preheated waffle maker. Cook until waffles are golden brown. Repeat this step for the remaining waffles.
- Serve hot topped with butter, maple syrup and extra bacon crumbles.
