Calling all breakfast lovers! We are bringing home the bacon with these maple bacon buttermilk waffles.
These aren’t your normal every-day toaster oven waffles, they are fluffy and buttery with a bit of bacon in every bite. They’re a nice treat on a slow weekend morning or a breakfast for dinner evening. A soft, fluffy waffle sprinkled with crispy crunchy bacon bits, drizzled with dark maple syrup and more crispy bacon bits to make heart warming breakfast that will keep you coming back for more.
Maple and bacon are one of those iconic flavor combinations like peanut butter and jelly. The salty crispy bacon and rich sweetness of the maple syrup balance each other so well it’s almost irresistible. Wrap those yummy flavors up in a waffle and you have one of the best breakfasts to please an everyones breakfast cravings. When you taste these waffles, it will be hard to just have one!
The Best Fluffy Maple Bacon Buttermilk Waffles
What is in this recipe?
Flours: We used a combination of whole wheat and all purpose flour in this recipe. We like the addition of whole wheat because it adds a density and heartier flavor to the waffles.
Baking powder and baking soda: Both help to make the waffles rise and give them that fluffy texture that’s so yummy!
Cinnamon: A little touch of cinnamon pairs well with the maple and bacon adding a little warm spice to the batter.
Eggs: You want to make sure your eggs are at room temperature. Eggs are the glue that keep the batter together! Our favorites to use for this recipe are Vital Farms Pasture Raised Eggs.
Buttermilk: If we are making homemade waffles, we are making making them with buttermilk!Buttermilk adds a rich buttery soft and fluffy texture to the waffles.
Maple Syrup: Maple syrup isn’t just good for pouring onto of cooked waffles. It can also add a slight sweetness to the batter. The maple flavor pairs so well with the saltiness of the bacon.
Bacon: Bacon makes everything better!! Crispy bacon pits sprinkled into every waffle screams delicious!
How to Make Buttermilk for Buttermilk Waffles
We know there are those mornings mornings where ingredients can be a little sparse. And we know buttermilk is not always a kitchen staple. So for those days you do not have buttermilk on hand, we have a solution to getting that same buttermilk taste with any milk in your fridge. Even plant-based milks will work!!
Start by adding 1 cup of milk or milk alternative and 1 Tbsp of white distilled vinegar to a bowl. If you are using plant-based milks, the consistency may not be as thick as using cow’s milk, but it will work just the same. Whisk for a several seconds and let the contents sit in the bowl for 5-10 minutes. The acid in the vinegar will start to make the milk proteins bubble and curdle. It should also start to smell a bit sour. That is what you want.
If you do not have vinegar, add 1 tbsp of Lemon juice! The acid in the lemon juice will act the same way to curdle the milk mixture.
Add the homemade buttermilk to your waffle mix and get cooking away!

Ingredients
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 3/4 cup buttermilk (*see notes for homemade buttermilk)
- 6 tbsp butter
- 3 tbsp maple syrup
- 6 slices cooked bacon (finely chopped)
Instructions
- Plug in and preheat waffle maker while you start making your batter.
- First start by cooking your bacon. Using a skillet over high heat, place 6 strips of bacon into the bottom of the pan. Cook until strips have turned darker brown and are a bit crispy. Remove from heat once cooked to allow to cool. You will also want to pat the bacon strips with a paper towel to remove excess grease before adding to your batter.
- In a large bowl, whisk together flours, baking powder, baking soda, cinnamon and salt.
- In a separate, medium sized bowl, whisk together eggs, buttermilk, melted butter and maple syrup.
- Pour your wet mixture into your dry mixture and mix until you can’t see any large clumps of batter. It should look pretty smooth.
- Add your 6 slices of cooked chopped bacon and fold into your batter.
- Grease waffle maker with cooking spray!Using a 1/3 cup as a scoop, scoop batter into preheated waffle maker. Cook until waffles are golden brown. Repeat this step for the remaining waffles.
- Serve hot topped with butter, maple syrup and extra bacon crumbles.
