Buttery Shortbread Crust
- 2 cups flour
- 1/2 cup powdered sugar
- 1/2 tsp salt
- 1 cup butter (melted)
Grapefruit Filling
- 4 eggs
- 2 cups sugar
- 4 tbsp flour
- juice of 1 grapefruit
Instructions
- Preheat your oven to 350°F, and butter and line the sides of a 9 x 13 glass baking pan with parchment paper.
- In a medium bowl combine melted butter, flour, powdered sugar and salt. Once the crust is combined, press the crust into the bottom of the pan. Bake for 20 minutes.
- While the buttery crust is baking, make the grapefruit filling. Mix the flour and sugar for the filling in a bowl. Whisk the eggs, sugar and grapefruit juice together until it’s well combined. Pour the filling over the baked crust and baked for 22-25 minutes.
- Allow the bars to cool for 30 minutes-1 hour and then sprinkle with a light layer of powdered sugar.
- Enjoy with friends at a brunch, afternoon picnic or evening backyard party.
