Buttery Shortbread Crust

  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1/2 tsp salt
  • 1 cup butter (melted)

Grapefruit Filling

  • 4 eggs
  • 2 cups sugar
  • 4 tbsp flour
  • juice of 1 grapefruit


Instructions

  1. Preheat your oven to 350°F, and butter and line the sides of a 9 x 13 glass baking pan with parchment paper.
  2. In a medium bowl combine melted butter, flour, powdered sugar and salt. Once the crust is combined, press the crust into the bottom of the pan. Bake for 20 minutes.
  3. While the buttery crust is baking, make the grapefruit filling. Mix the flour and sugar for the filling in a bowl. Whisk the eggs, sugar and grapefruit juice together until it’s well combined. Pour the filling over the baked crust and baked for 22-25 minutes.
  4. Allow the bars to cool for 30 minutes-1 hour and then sprinkle with a light layer of powdered sugar. 
  5. Enjoy with friends at a brunch, afternoon picnic or evening backyard party.
