A pizza inspired by street corn tacos?! YES PLEASE!!! We swapped the taco shell for a fluffy pizza crust for a fun tex-mex twist on your next pizza night! Fresh pizza dough topped with a tangy avocado lime pizza sauce, charred street corn, spicy chorizo feta cheese and cilantro. 

If we were given the option of pizza delivery or make pizza at home, 9/10 times we are sacrificing the convenience for making pizza at home! Why?? It can be cheaper, you have total freedom with ingredients and its more FUN!! 

Friday’s have coined the term “Friday Pizza Night” in our house. It is one night a week that we have fun in the kitchen and make a yummy pizza. Normally we default to making veggie pizza loaded with lots of fresh veggies (because balance, right!?). But this week we were wanting to change it up a little and have fun!

Street Corn Pizza Toppings

All the a corn street taco favorites for topping your pizza!

  • Pre-made pizza dough: Our favorite pre-made pizza dough is from whole foods. They sell fresh pre-made dough balls that just require you to roll out, top and bake! See some more recommendations below.
  • Corn on the cob: Fresh corn is essential for making the fresh charred corn like you get in a street corn taco.
  • Shallots: Have a sweeter and milder taste than an onion. It’s delicate flavor complements the other toppings without being overpowering, like the taste of some onions. 
  • Feta Cheese: We recommend crumbling a block of feta cheese, because it holds more moisture and will help to bind the toppings when cooking, making it less crumbly.
  • Chorizo: A flavorful pork seasoned with paprika and other spices. We used chorizo pork sausage for this recipe.
Avocado Lime Pizza Sauce

Tastes like an avocado lime sauce that is sometimes drizzled over street tacos. If you have any left over after spreading over the pizza, you can dip your pizza in the sauce!

  • Yogurt: Instead of using heavy cream for the cream sauce, we swapped the cream for a yogurt. It is a healthier and lighter alternative and you won’t even be able to tell the difference.
  • Jalapeño: Adds spiciness to the sauce. You can manage the level of spice by completely deseeding or add some heat by keeping some of the seeds.
  • Avocado: Makes the sauce super creamy and gives it a pretty green flavor.
  • Limes: Adds a tanginess to the sauce.
  • Garlic Powder and onion powder: Add a subtle garlic and onion flavor to the sauce.
  • Cilantro: Has a vibrant pepper flavor. We added it to the sauce and for topping the pizza.

Direction Snapshot:

 1. Cook corn in oven and broil to char and blacken the outside of the corn.

2. Make avocado lime pizza sauce.

3. Spread out dough.

4. Add toppings and bake pizza. 

5. Top with cilantro and Tajin. Slice and enjoy!!

The Best Pre-Made Pizza Dough

There are some AMAZING pre-made pizza options at local grocery stores. We always opt to pick up a fresh pizza dough ball instead of making our own dough. Here are our favorites.

We used Whole Foods fresh pizza dough ball for this recipe. In our opinion it is the best fresh dough out there. So, if you have a Whole Foods market close by, we recommend grabbing one from the bakery. Its a soft, thick and chewy dough that is closest to restaurant-quality you can get for a make-at-home dough.

Trader Joes fresh pizza dough ball. This one is a close second to the Whole Foods. It has a nice flavor but is a bit dryer. 

Gluten free? We recommend Bob’s Red Mill Pizza Dough Mix. It won’t have the same texture as normal pizza dough, but is a good option if you have any diet restrictions.

How to char corn without a grill:

  1. Broil - A safer option but you do have to make sure to check frequently. Once your corn cobs are mostly cooked, remove the corn husks from the cobs and turn on the broiler setting. Place the corn cobs back in the oven and broil for abut 2 minutes on each side.
  2. In a skillet - After the corn cobs have cooked in the oven, remove the husks and brush with olive oil. Place the corn cobs in a skillet over medium heat and roast on each side for 2-4 minutes. Once there starts to be some browning go the kernels, rotate the corn cob to char the other the other sides. There will be some popping coming from the corn kernels. It can be a surprise at first but it’s normal!
  3. Over an open flame - I would only recommend doing this if you have a lot of control over the flame or are confident charring over an open flame. Peel back the corn husks and remove. Carefully hold the corn cob over the flame, making sure your hand is not too close to the flame. There will also be some popping coming from the corn kernels with this method. Carefully rotate the cob to char the other sides.

Description

Fresh pre-made pizza dough topped with a tangy avocado lime pizza sauce, charred street corn, spicy chorizo feta cheese and cilantro. 


Ingredients

Units Scale

1 pre-made pizza dough ball/crust

2 corn cobs

2 shallots, sliced

1 jalapeño, chopped

8 oz feta cheese

4 oz chorizo

Avocado Lime Pizza Sauce

1/2 cup plain greek yogurt

2 tbsp chicken broth

1/2 avocado

2 tbsp milk

2 limes, juiced

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 cup cilantro

Tajin seasoning (optional)


Instructions

  1. Preheat oven to 425ºF. Place corn cobs on baking sheet or flush on the oven rack and cook for 20 minutes. *See notes below for charing the corn.
  2. After cooked and charred, remove the corn from the cob. Using a sharp knife, cut downward on the side of the cob, rotating to remove the kernels from the other sides. 
  3. In a high powered blender, add all the pizza sauce ingredients. Blend until smooth.
  4. Flour a pizza stone or baking sheet. Spread out your pre-made pizza dough on the pan. 
  5. Spread an even layer avocado lime pizza sauce on the pizza. Sprinkle with cheese, shallots, corn, chorizo and more cheese. 
  6. Bake pizza dough according to package instructions. 
  7. Once baked, let it cool for 5 minutes and top with more fresh cilantro and a sprinkle of Tajin seasoning. 

Notes

How to char corn without a grill:
