Description

If you grew up on strawberry toaster waffles, consider these strawberries and cream waffles a grown-up version of the frozen breakfast favorites. Fresh strawberries are folded into a strawberry batter and cooked to fluffy, crisp perfection. Topped with homemade whipped cream, fresh strawberries and a healthy drizzle of maple syrup.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup freeze-dried strawberries, blended into powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1.5 cups buttermilk
  • 6 tbsp butter, melted
  • 2 tbsp sugar
  • 1 cup strawberries chopped (plus extra for garnishing)
  • 1 cup maple syrup

Homemade Whipped Cream

  • 1 cup heavy cream
  • 2 tbsp sugar
  • 1 tbsp vanilla


Instructions

  1. Preheat the waffle maker while you start making your batter.
  2. First, use a food processor or high-powered blender to blend freeze-dried strawberries into a powder. This will give the waffles a yummy strawberry flavor throughout, plus a bit of a pink color.
  3. In a large bowl, whisk together flours, strawberry powder, baking powder, baking soda, and salt.
  4. In a separate, medium-sized bowl, whisk together eggs, buttermilk, melted butter, and sugar. Tip: Make sure butter is cooled a bit after being melted.
  5. Pour your wet mixture into your dry mixture and mix until smooth and you can’t see any large clumps of flour. Fold in chopped strawberries
  6. Grease the waffle maker using a pastry brush to brush with butter or oil! Using a 1/3 cup as a scoop, scoop batter into the preheated waffle maker. Cook until waffles are golden brown. A good indicator that they are done cooking is when the steam stops rising out of the machine. Repeat this step for the remaining waffles.
  7. Make homemade whipped cream. Add heavy cream, powdered sugar, and vanilla to the bowl of an electric stand mixer with the paddle attachment. Whisk on medium-high for 3-4 minutes until a fluffy whipped texture forms. Stop whisking when medium peaks form (they should be soft but still hold shape).
  8. Serve hot, topped with butter, maple syrup, and strawberry slices, and homemade whipped cream.
