These are not normal strawberry muffins, they are decadent with several layers of goodness. Not only are they topped with streusel, but they have a cream cheese filling. It’s these little details that take this muffin to the next level. Here’s some tips for making each component of these muffins.

Making the Strawberry Muffin Batter

Muffin batter has to be one of the easiest baked goods to make! It’s super simple and doesn’t have to be very technical. Which is why we love making muffins so much. Seriously, we could make these every day!

You will start by mixing together your dry ingredients in a large bowl. In a separate bowl, you will mix toss some chopped strawberry pieces in flour. The flour coating will help to make sure the strawberries don’t float to the bottom while cooking. You will set both the flour mixture and strawberry bowls to the side for now.

Next step is to mix together your wet ingredients; the butter, milk, sour cream and vanilla extract. Sour cream is the secret ingredient for a dense yet soft muffin. 

Lastly, pour you wet ingredients into the flour mixture. Stir in the chopped strawberries and set the batter to the side while you prep your cream cheese filling and streusel topping.

Making Cream Cheese Filling

In a medium bowl, mix together softened cream cheese, vanilla extract and sugar, until the mixture is well combined. The softened cream cheese will make it easier to mix. And the sugar and vanilla will cut through the tartness of the cream cheese to make it taste super yummy. 

Making Streusel Topping

Streusel instantly makes muffins better! In a small bowl, combine butter, flour, sugar, brown sugar, and salt. Mix together with a fork (or your hands) until it starts to clump together in pea sized clumps.

The secret to making the perfect muffin top!

Ever wonder how bakeries get the tall, rounded muffin tops on their muffins? Here’s how you can get that bakery-style muffin top at home. 

Start by bake the muffins on 425°F for 4 minutes. Then, lower the temperature to 350°F for the remaining 15 minutes. The higher temperature in the begging helps to quickly activate the baking powder and create that iconic muffin top.

How do you store muffins?

If you do not plan on eating the muffins the same day, they will be good for 3-4 days in an airtight container or ziplock at room temperature.

You can also freeze the muffins. Place them in a single layer in a ziplock bag and freeze for up to 3 months. 

How do you reheat frozen muffins?

  • Thaw muffins at room temperature: Leave muffins on counter to thaw for 1-2 hours until completely thawed out. Warm them to your liking in the microwave for 10-15 seconds each. 
  • Reheat in the Oven: Preheat oven to a low temperature, 350ºF. Place on baking sheet and heat for 10-15 minutes until warm.
  • Reheat in the Microwave: A quick way to reheat muffins is in the microwave. Unwrap and preheat for 30-60 seconds until warm. Timing will vary depending on how your microwave cooks.

Ingredients

Strawberry Muffin Batter

  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped

Cream Cheese Filling

  • 6 tbsp cream cheese, softened
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract

Brown Sugar Streusel

  • 4 tbsp butter
  • 1/2 cup flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp salt


Instructions

  1. In a large bowl, add flour, baking powder, and salt. Whisk the dry mixture until all the ingredients are incorporated. In a small bowl, toss strawberries in 2 tbsp flour until covered.
  2. In a medium size bowl, mix eggs, sugar, butter, milk, and sour cream together.
  3. Mix dry ingredients into the wet mixture. Then gently fold in the chopped strawberries.
  4. For the cream cheese filling, add the cream cheese, vanilla and sugar to a small bowl and mix together well until combined. Set aside.
  5. To make the streusel, combine butter, flour, sugar, brown sugar, and salt.
  6. Using an ice cream scoop, scoop a couple of table spoons of batter into the muffin tin, add a spoonful of cream cheese mixture, then top with 2 tbsp of muffin batter. Add streusel to the top of each muffin.
  7. Bake on 350ºF for 20-25 minutes. Remove the muffins from the oven and let them cool for 10 minutes.
  8. Enjoy with a hot cup of coffee or tea.
