Making cakes stress us out!! That’s probably a shocking statement considering we are constantly baking something. But there are something about cakes that really make us nervous. Maybe it’s because there are so many rules to follow to make sure your cake doesn’t come out too dry or doesn’t sink in the center. 

When it comes to making a cakes, we’ve had more horror stories than success. UNTIL… we made this sheet cake. We seemed to have cracked the code for making a perfectly fluffy and soft cake and are sharing some of our tips so that you don’t have to break a sweat! 

A soft, cloud-like white chocolate vanilla cake swirled with berry jam, topped with a whipped cream cheese frosting coconut flakes and fresh berries. It’s has a perfectly light and soft texture and the whipped cream cheese icing keeps the cake light and fresh. A perfect spring or summer treat!!

What you need

Dry Ingredients

  • Sugar
  • All purpose flour
  • Baking powder
  • Salt

Wet Ingredients

  • Milk
  • White chocolate
  • Vanilla extract
  • Almond extract
  • Mixed berry jam
  • Butter
  • Vegetable oil

Whipped Cream Cheese Icing

  • Cream cheese
  • Powdered sugar
  • Vanilla extract
  • Heavy cream
  • Fresh berries for topping

Direction Snapshot:

1. Preheat oven and prep cake pan.

2. Mix dry ingredients together

3. Whip egg whites until soft peaks form.

4. Make batter and fold in egg whites and berry jam.

5. Pour batter in cake pan and bake.

6. Cool cake and make frosting.

7. Frost cake and top with fresh berries. 

8. Slice and enjoy!

Tips for making a perfect cake:

Line cake pan with parchment paper. This will allow for clean and easy removal from the cake pan. It is a tried-and-true trick that will save you a lot of clean up time too!

Room temperature ingredients. It is important that your butter, eggs and cream cheese are room temperature so that you have a smooth batter. Chilled ingredients are harder to blend together and can make a clumpy texture. This will help get you the cake texture you want.

Whip egg whites into soft peaks and fold into batter. This is KEY for making a super soft and fluffy cake. The egg whites will be folded into the cake batter after you have made the batter. It may seem kind of backwards to stir in the eggs at the end of making the batter, but this technique will make the cake light an airy, while keeping the moisture.

Ingredients

Units Scale

1/2 cup butter, room temp!!!

1/2 cup oil

2 cups sugar

6 egg whites (room temp and whipped)

3 c flour

1 tsp salt

2.5 tsp baking powder

1.5 cups milk

1/2 cup white chocolate

1 tsp vanilla

1/2 tsp almond

1/2 cup mixed berry jam

Whipped Cream Cheese Icing

8 oz cream cheese, room temperature

1 cup powdered sugar

1 tsp vanilla 

2 cups heavy cream 


Instructions

  1. Preheat oven to 350°F and grease and line a 9×13 inch cake pan. 
  2. In a sauce pan over medium heat, melt chocolate in milk. Let it cool at room temperature.
  3. In a medium bowl, add flour, salt, baking powder and mix to combine. Set aside.
  4. Start by whipping egg whites in an electric mixer with whisk attachment on high speed until stiff peaks form. 
  5. In an electric mixer, with paddle attachment, add butter and oil. Cream butter and oil on medium speed until it comes together. Very important your butter and eggs are room temp!!
  6. Add in sugar and mix on high until creamy. Add in vanilla and almond extract. Pour in 1/3 of milk mixture with 1/3 of flour mixture, alternating between milk and flour mixture until combined. 
  7. Remove bowl from electric mixer and gently fold in whipped egg whites until combined.
  8. Add several large spoonfuls of mixed berry jam and fold into the batter. Pour into the greased and lined cake pan and bake in oven for about 35-45 minutes. Check to make sure cake is done by inserting fork/tooth pick. If it comes out clean, it is done. 
  9. Cool completely on wire rack. While cake is cooling, make icing. 
  10. Add icing ingredients to your electric mixer with the whisk attachment. Whip for a couple minutes until light and fluffy.
  11. Using a knife or rubber spatula, spread the icing over the top of the cake. Sprinkle top with coconut, extra white chocolate chips and fresh berries.
