The recipe is made with fresh apples and pears, warm notes of cinnamon and delicious nuts. This is a super simple breakfast recipe to make and eat throughout the week.

The Idea Behind the Cinnamon Apple and Pear Baked Vegan Oatmeal

We woke up one morning craving something warm for breakfast. Typically, we gravitate towards making a bowl of oatmeal in the morning, but we had seen baked oatmeal on Tiktok and wanted to make our own version of it. Pears and apples are in season during the fall, so we knew we wanted to create an oatmeal with those two flavor profiles.

This baked oatmeal recipe is a perfect combination of warmness and freshness provided from the apples and fresh fruit added to the recipe. Baked oatmeal is made similar to a muffin mix, where you combine all the dry ingredients with the wet ingredients. It is so simple to whip together and is packed with more flavor and protein than normal oatmeal, leaving your taste buds and your stomach satisfied!

What’s in this Recipe?

Gluten Free-Oats: We use gluten-free oats in this baked vegan oatmeal recipe, because we prefer to exclude as much gluten from our diet as possible. Gluten free oats don’t retract from the consistency of this recipe. We can’t taste the difference, but our body can feel the difference. You can buy gluten-free oats here, or see if your local grocery store has them available.

Coconut Sugar: We love coconut sugar, and it makes this recipe so delicious. We prefer the taste of coconut sugar to brown sugar most of the time. It has a very similar consistency gives recipes a more caramel-y flavor. Not to mention, it’s a much healthy option.

Almond Milk: Almond milk is an alternative milk that we used to replace traditional whole milk. Almond milk makes this baked vegan oatmeal a creamier texture and flavor.

Vegan Eggs: Vegan eggs are a great substitute for real eggs. If you eat a vegan diet, these vegan eggs are great to bake with.

Apples and Pears: The fruit is the star of this recipe. We love the combination of pears and apples in the baked vegan oatmeal. Eating this baked oatmeal right out of the oven is the best, because you bites of juicy, warm fruit.

Nuts: We love the addition of nuts in this recipe. They add a crunch for added texture and contribute to the other warm flavors in this recipe. If you prefer to not use nuts, you can simply leave them out of the recipe.

Baked Vegan Oatmeal for the Week

Another great thing about this recipe is the quantity it makes! This recipe is baked in a large dish and serves about 6-8 people. Make this for a brunch or breakfast with your family and friends. It will be a crowd favorite. Our family loves this recipe, and always ask us to make it on cool fall and winter mornings.

It is also great for meal prepping weekly breakfasts or a brunch with friends or family. We often bake this baked oatmeal on Sunday night, so we can easily grab some in the mornings before we start work. It’s such a simple and delicious breakfast to prepare ahead of time.

Substitute Fruit with Other Goods

Instead of using pears and apples, feel free to mix it up and add other goods to your recipe. We like adding nut butter to our baked vegan oatmeal because it adds a creamy, nutty flavor.

Chocolate: For a chocolate and decadent baked oatmeal, add 2 Tbsp of cocoa powder or ¼ cup chocolate chips

Nut Butter: For all those peanut butter/nut butter  lovers, adding a nut butter to the oatmeal a great creamy and nutty flavor to the baked oatmeal and adds some extra protein to the dish. If you want to add nut butters to the oatmeal, I recommend about ¼ cup. 

Fruits: You could swap the apples and pears, bananas, blueberries, cherries, or maybe dried fruits such as cranberries

Spices: You can swap the cinnamon or add additional spices for different flavors. Cardamom, Nutmeg, apple pie spice, pumpkin pie spice are some spices you could play around with when making your own.

Other Toppings: You could top the oatmeal with extra nuts, coconut flakes, sliced bananas, drizzle with peanut butter!

Ingredients

Units Scale
  • 2 cups rolled oats
  • 3/4 cup coconut sugar ((If you don't have coconut sugar, you can use brown sugar as well.))
  • 1/3 cup pecans
  • 1/3 cup walnuts
  • 1/2 cup raisins
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups almond milk (Alt: milk or other milk alternatives)
  • 2 vegan eggs
  • 1 tsp vanilla
  • 4 tbsp vegan butter
  • 1 apple, chopped ((I have used granny smith and fuji. Both work well but I prefer the more tart granny smith flavor!))
  • 1 pear, chopped

Instructions

  1. Preheat the oven to 375°F. 
  2.  Grease a 8×8 baking dish with butter. 
  3. Combine your dry ingredients, oats, coconut sugar, half of the nuts (the other half will be for the topping), raisins, baking powder, cinnamon, salt in a medium bowl. Stir the ingredients together until they are incorporated. 
  4. In a separate medium bowl, whisk eggs first. Add milk and vanilla and whisk into eggs until combined. 
  5. Add your wet ingredients to your dry ingredients. With a rubber spatula stir in melted butter and mix just until wet and dry ingredients are blended together.
  6. Place chopped apples and pears at the bottom of the greased baking dish. Pour the oat mixture over the fruit and spread evenly. Sprinkle the rest of the pecans and walnuts on top. 
  7. Bake in oven for about 40-45 minutes. Each oven may cook differently, but the top of the oatmeal should be golden brown when done. Let cool for 10 minutes. We recommend serving the oatmeal warm out of the oven!
