This year, we thought to make a Thanksgiving charcuterie board for all our friends and family. It’s super easy to assemble and a delicious snack filled with so many delicious fall flavors.

Meat and Cheese:

Leaf-Shaped Cheese: To make our Thanksgiving charcuterie board festive for fall, we cut slices of cheese into the shape of leaves and acorns, using cookie cutters.

Cranberry Goat Cheese: This cheese is a must for your Thanksgiving board. It’s made with sweet goat milk, cranberries and cinnamon. This cheese pairs nicely with the ginger snap cookies.

Summer Sausage: When we think of the holidays, we think of eating summer sausage. This is such an easy meat item to add to your board that everyone will love.

Cranberry Almond Cookies: Not only do these cookies look beautiful on the board, but they taste amazing as well. The flavor of cranberry and almond is the perfect addition to the Thanksgiving charcuterie board.

Fresh Fruit:

Clementine Slices: Mini clementine slices are a crowd favorite and add a pop of orange to the board.

How to Make the Healthy Date Caramel Sauce

We wanted to add a healthier version of traditional caramel sauce that wasn’t filled with a bunch of white sugar. 

This healthy caramel sauce is super easy to make and is a delicious dip for fruits on your Thanksgiving Charcuterie board.

To make it, all you have to do is add 10 dates and a cup of boiling water to a blender. Blend the water and dates until the mixture is smooth and there are not lumps.

Pour the mixture into a sauce pan, add maple syrup and a pinch of salt. Bring the mixture to a boil, stirring continuously. Once it’s at a boil, lower the heat to simmer and stir occasionally. Allow the mixture to simmer for 20 mins.

Once the time is up, pour the mixture into a Tupperware bowl or container and transfer to the fridge. Allow the mixture to cool completely. Now it’s thickened and ready to serve!

How to Prepare Your Charcuterie Board Ahead of Time

Charcuterie boards are super simple to prepare ahead of time. If you find yourself short on time before Thanksgiving, here is a hack to help you save time on the actual day.

1. Slice Your Meat

To prepare your meat ahead of time, slice your summer sausage the day before and store in air-tight container in your fridge.

2. Prep Your Fruit with Lemon Juice Before Time

If you want to slice your apples the day before, you can prevent them from turning brown by squirting a bit of lemon juice on them. This will keep them fresh-looking for the next day.

3. Cut Your Cheese with Leaf Cookie Cutters

Cutting the cheese in the shape of leaves and acorns isn’t necessary, but we do think it is such an adorable touch on the Thanksgiving charcuterie board. Using a cookie cutter, cut out the cheese and store in an airtight container in the fridge.

4. Make Your Caramel Sauce the Day Before

Whether you are on a time crunch or not, you may want to prepare your caramel sauce the day before so it has time to cool and thicken before you starve to guests.

How to Assemble Your Thanksgiving Charcuterie Board

This Thanksgiving Charcuterie board is super simple to put together, and you can use the picture below to help you assemble yours as well.

First, add the grapes in opposite corners of the board. Add the apples around the board. 

Next, we added the summer sausage to the board. We placed it randomly around the board, but along the edges for easy access. 

Then we added the cranberry cheese log to the center of the board. We added a bowl of the mixed nuts and a bowl for the caramel sauce that we were still waiting to cool.

Next, we added a an S-curve of crackers down the middle of the board. We love the way this looks and how it breaks up the board.

After that, scattered the pieces of clementine around the board, added the mini ginger snap cookies, and the cranberry almond cookies.

We cut our cheese slices into the shapes of leaves and acorns using cookie cutters. We scattered the cheese pieces around the board where there were empty spaces.

Finally we added the healthy caramel sauce to the small dipping bowl and the board was ready to serve. Decorate with fresh rosemary twigs to add some greenery.

  • 10 pitted dates
  • 1 cup boiling water
  • 1 tbs maple syrup
  • pinch salt
  • 1 tsp vanilla paste

  • 1 pkg multi-grain seed crackers
  • 1 bag mini ginger snaps
  • 1 box cranberry almond cookie thins
  • 12 pkg cheese slices (cut into leaf shapes)
  • 1 log cranberry cinnamon goat cheese
  • 1 log summer sausage (sliced)
  • 510 clementines
  • 1 bag grapes
  • 23 apples (sliced)
  • 1 cup assorted nuts
  • 1 pkg fresh rosemary (for decoration)


Instructions

  5. Scatter pieces of clementine around the board, add the mini ginger snap cookies, and the cranberry almond cookies.
  6. Cut your cheese slices into the shapes of leaves and acorns using cookie cutters. Place the cheese pieces around the board where there are any empty spaces.
