This Strawberry Yogurt Coffee Cake will be your new breakfast or brunch staple!

Who says you have to stay in your comfort zone? We get it…once you know what you like to eat, it’s hard to break out of that bubble. However, some of our favorite recipes have come out of us pushing the boundaries of basic.

We wanted to have some fun and created a fresh twist on the classic crumble cake and thought strawberry would be perfect for summer. We have to admit, we were a little hesitant to add strawberries to this coffee cake because we are so biased to traditional cinnamon coffee cake. Made with layers of sweet cinnamon cake and fresh strawberry compote, and topped with a cinnamon cardamom streusel.

We tested this recipe once and were instantly hooked! It honestly shocked us that this strawberry flavored coffee cake was that good. We truly think you’ll be obsessed with this strawberry yogurt coffee cake!

Is there coffee in coffee cake?

There is not an ounce of coffee in this coffee cake! Despite the name, coffee cake traditionally does not have any coffee baked into the mixture. 

It was actually given it’s name because the sweetness of the cake pairs so well with the bitterness of coffee. Basically, coffee cake is cake made to be eaten with coffee. We can attest that it does in fact taste amazing with coffee.

What’s in this recipe? 

Flour: What’s bread without the main ingredient…flour?

Baking Powder: The baking powder helps the bread rise.

Salt: A little bit of salt in the batter helps to offset all the sweet flavors.

Butter: Butter just makes things taste better and makes breads more moist.

Sugar: Sugar is what makes this bread sweet.

Greek Yogurt: The addition of yogurt adds moisture and added flavor. Plus, it makes it more filling as well!

Cinnamon: Cinnamon is a traditional ingredient to classic coffee cake, so we thought it would also pair well with the strawberries.

Cardamom: Cardamom pairs so well with pretty much any berry, so we knew that adding it to this recipe would elevate the flavor profile as well.

Strawberries: The strawberries are the star of the show! They are so delicious in this coffee cake.

Orange Juice: The orange juice is in the strawberry compote, and adds a citrus flavor to the compote. The contrast of the acid from the juice and the sweetness of the strawberries makes this compote delicious.

How to Make the Strawberry Compote

The strawberry compote is super simple to make, but it takes a little bit of time. We suggest making it before you start anything else. You could even make it a day or two ahead of time and stop in the refrigerator until you’re ready to use it.

To start you’ll need a pot (like this one). Over medium heat, add the strawberries, orange juice, spices and sugar to the pot. Bring the mixture to a boil and start to mash and mix the strawberry mixture as it’s heated.

Once the mixture had thickened, remove from the heat and allow it to cool completely.

How to Make the Strawberry Yogurt Coffee Cake

This coffee cake batter is so easy to make too!

To start, you’ll need a mixing bowl (we love these mixing bowls) and whisk. Whisk flour, baking powder, salt and cinnamon together.

In a stand mixer (this is the one we use), cream the butter and sugar. Then, add the eggs, vanilla and yogurt. Once that is all combined, add the dry ingredients. Mix until the batter is just combined. You want to be carful not to over mix the batter.

In a prepared bread pan (this is one similar to ours), spoon 1/2 the batter, add 3/4  of the strawberry compote. Then add the last half of the batter and the remaining strawberry compote. Swirl the strawberry compote on the top with a toothpick or knife.

Add the streusel to the top and gently press into the top of the batter. Bake at 350°F for 45-50 minutes.

How to Make the Cinnamon Cardamom Streusel

While the bread is cooling, it’s time to make the streusel. Again, it’s super simple to make as well.

All you have to do is add all the ingredients to a small mixing bowl, and using your hands, mix the ingredients together until a the ingredients begin to incorporate and small balls or crumble begin to form.

What do you eat with coffee cake?

Coffee cake is a traditional breakfast cake and pairs well with a hot cup of coffee or tea.

This strawberry yogurt coffee cake could also be served at a breakfast or brunch with mini quiche bites, bacon, scrambled eggs, and other breakfast foods.

We also love eating this cake after dinner with a hit cappuccino or cup of peppermint tea.

Strawberry Compote

  • 1 cup strawberries (quartered)
  • 1/4 cup sugar
  • 3 tbsp orange juice
  • 1/4 tsp cardamom
  • 1/4 tsp cinnamon

Strawberry Yogurt Coffee Cake

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 stick unsalted butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3/41 cup greek yogurt
  • 1 tsp cinnamon

Cinnamon Cardamom Streusel

  • 2 tbsp butter
  • 4 tbsp flour
  • 4 tbsp brown sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom


Instructions

Strawberry Compote

  1. Over medium heat, add the strawberries, orange juice, spices and sugar to the pot. Bring the mixture to a boil and start to mash and mix the strawberry mixture as it’s heated.
  2. Once the mixture had thickened, remove from the heat and allow it to cool completely.

Cinnamon Cardamom Streusel

  1. Add all the ingredients to a small mixing bowl, and using your hands, mix the ingredients together until a the ingredients begin to incorporate and small balls or crumble begin to form. Set aside for later.

Strawberry Yogurt Coffee Cake

  1. Preheat oven to 350°F. Butter or grease a bread pan and press parchment paper to pine the pan.
  2. In a mixing bowl, whisk flour, baking powder, salt and cinnamon together.
  3. In a stand mixer, cream the butter and sugar.Then, add the eggs, vanilla and yogurt. Once that is all combined, add the dry ingredients. Mix until the batter is just combined. You want to be carful not to over mix the batter.
  4. In your prepared bread pan, spoon 1/2 the batter, add 3/4  of the strawberry compote. Then add the last half of the batter and the remaining strawberry compote. Swirl the strawberry compote on the top with a toothpick or knife.
  5. Add the streusel to the top and gently press into the top of the batter.
  6. Bake at 350°F for 45-50 minutes. Enjoy with a hot cup of coffee or tea!
