Soup is one of the best, easy go-to-meals for weeknight dinners. We really love the simplicity of making a pot of soup, because all it takes is of throwing everything in a pot and letting it all simmer together. And the final product just tastes so good!

The fresh flavors in this creamy roasted tomato basil soup can be tasted in every bite. And even though tomatoes are the main ingredient, that doesn’t mean the other ingredients shine through. The key to making this soup flavorful while keeping the ingredients simple, is using a lot of fresh ingredients! It is a delicious blend of roasted tomatoes, onions and garlic fresh basil and dairy-free coconut milk leave little need for additional seasonings.

This Creamy Roasted Tomato Basil Soup is not only simple and yummy but its quick! We know how busy life can get, but that doesn’t mean that you can’t whip up a yummy, heart-warming meal! All you need to do is throw everything in a pan, pop in the oven and by the time your favorite sitcom show is over, you have a yummy dinner!

The best complement to this soup is a hot grilled cheese sandwich! The two together make the coziest meal on a day you are craving comfort food without a lot of labor!

What’s in this Recipe?

Tomatoes: The star ingredient in this dish! Roasting the tomatoes before blending the ingredients together adds a nice hearty flavor.

Purple Onion: We love purple onion and prefer it in most dishes! But you can substitute with a yellow onion if that is what you ahve on hand.

Garlic cloves: We always go overboard on the garlic sometimes, just because we feel like there can never be too much!

Coconut Milk: We chose to use a dairy-free alternative to heavy cream. Full fat coconut milk adds a rich creaminess to the soup. You can’t even taste coconut because the tomato and basil flavor is so strong.

Chicken Broth: We added a little chicken broth for additional flavor. It adds the right amount of saltiness, so there really is no need to season after it is baked.

Fresh basil leaves: We’re going to let you in on a little secret for this recipe! The more basil the better! Without the basil, this soup would not have the fresh, rich flavor that makes this it good.

Thyme: Thyme is added for additional seasoning and adds a rich earthy flavor. There really is nothing like fresh thyme, but if you don’t have it on hand, dried herbs are just fine.

Honey: Just a spoonful of sugar…. really thats all you need to add a little sweetness to help combat the acidity of the tomatoes.

Quick and Easy Creamy Roasted Tomato Basil Soup

Ingredients

Units Scale
  • 6 tomatoes (sliced in fourths)
  • 2 tbsp extra virgin olive oil
  • 1 red onion (chopped)
  • 4 cloves garlic
  • 4 sprigs thyme
  • 1 cup fresh basil
  • 1 tbsp honey
  • 2 tsp paprika
  • 3/4 cup coconut milk (full fat)
  • 1/2 cup chicken broth
  • cherry tomatoes (optional)
  • parmesan reggianno (optional)


Instructions

  1. Preheat oven to 450. 
  2. Start by slicing tomatoes in fourths. Place tomatoes, garlic and onion on a dutch oven (or baking sheet). Drizzle with olive oil, sprinkle with salt pepper and thyme sprigs.
  3. Place in the oven and roast for 25-30 minutes until tomatoes are brown on the edges and bubbling with juices. Once out of the oven, cool for 5 minutes before adding to the blender.
  4. In a blender, pour in the hot roasted tomato and onion mixture. Add your coconut milk and chicken broth and basil leaves. 
  5. Blend until smooth. If you need to warm up the soup a little more, pour back into your Dutch oven and heat low on the stove.
  6. Pour in bowls and serve topped with cherry tomatoes and parmesan reggiano and fresh basil. Pairs very well with grilled cheese!

Notes

*if you don’t have a Dutch oven, use a large pot.

**if you don’t have a blender, you can use a hand blender.
