A super duper simple appetizer or dinner that is bursting with summer flavors! Turn a simple store-bought dough into this elegant puff pastry tomato basil tart.

A light puff pastry crust, balsamic and olive oil drizzle, fresh grated parmesan cheese topped with shallots and fresh heirloom and cherry tomatoes. Slice this tart and serve as a delicious appetizer or make it a main course and serve with a salad or a dessert. 

One of our favorite things about summer is our tomato garden!! There really is nothing like fresh tomatoes off the vine. If you ever get a chance to grow your own, even if it’s on a patio garden at your apartment, do it! Every summer our garden makes so many tomatoes that we have to find creative ways to use them so they don’t go bad. Heirloom tomatoes are not only perfect for this tart but also great to make restaurant-style salsa or roasted tomato basil soup.  And if you have some cherry tomatoes on hand, we love to throw the smaller tomatoes in dishes like fresh corn cold pasta salad and roasted tomato artichoke dip

You may have everything you need for this tart in your kitchen. All you’ll need a frozen puff pastry, some herbs, cheese and tomatoes to whip together this tart in just less than 30 minutes! If you’re on a time crunch or just looking for a super simple and delicious week-night dinner, this one’s for you!! 

Puff Pastry Tomato Basil Tart

Thaw and roll out your dough….

Start by flowering a sheet of parchment paper and rolling out your thawed puff pastry dough into a large rectangle. You want to make sure the puff pastry dough has thawed according to package instruction. Set the dough aside while you prep your tart toppings. 

Add the toppings…

Next, you’ll want to prep all your toppings. After you slice your tomatoes, press the slices with a dry paper towel to remove any excess juices. After you have sliced your tomatoes, slice one shallot and get out the rest of your toppings to assemble. 

Start by drizzling olive oil and balsamic vinegar on the puff pastry crust and brush around the surface, leaving about a 1 inch bare on the edges for your crust. Next, sprinkle seasonings and grated parmesan. Lastly, lay down one layer of tomatoes, next sprinkle shallot slices and some more parmesan and then another layer of tomatoes. 

Before you place in the tart the oven…

Fold the bare crust edges oven the sides to meet the edge of the tomatoes. Brush the pastry edges with an egg wash and sprinkle with sesame seeds. Place in the oven and cook for about 20-25 minutes until the puff pastry is golden brown on the edges. 

Once your tart is done, let it cool for a 5-10 minutes before cutting and serving. Top with more parmesan and fresh basil if you choose!! ENJOY!!

Puff Pastry Tomato Basil Tart

Description

A light and fluffy tart made with puff pastry dough, fresh sliced heirloom tomatoes, grated parmesan and basil.


Ingredients

  • 1 puff pastry dough ((thawed, rolled out))
  • 4 fresh heirloom tomatoes (sliced)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp fresh thyme
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1 shallot (thinly sliced)
  • 1 cup grated parmesan
  • 1 egg (beaten for egg wash)
  • 1 tbsp sesame seeds


Instructions

  1. Preheat the oven to 425°F. Roll out thawed pastry dough onto a baking sheet lined with parchment paper. Set aside as you prep your tart toppings.
  2. Thinly slice your tomatoes and gently press them with a dry paper towel to remove excess juices. Slice one large shallot and set aside. Next drizzle olive oil and balsamic vinegar on your puff pastry and spread on the surface of the crust using a pastry brush, leaving about 1 inch on the edge of your pastry for crust.
  3. Next, sprinkle thyme, garlic salt, onion powder, 3/4 cup of grated parmesan on the puff pastry.
  4. Lastly, lay your shallot slices, 1/4 cup of parmesan on the puff pastry and top with tomato slices. Gently beat the egg for an egg wash and brush over edges with pastry brush (this will give the crust a nice brown color). Sprinkle with sesame seeds and place in oven to cook fo 20-25 minutes, until golden brown on the edges.
  5. Remove from oven and cool completely before serving. Top with extra parmesan, fresh basil or thyme and serve.
