The Caramelized Onions

The caramelized onions cook slow, but this is what elevates the mashed potatoes to the next level. Even though it takes some time for the onions to cook down, we think it’s such a fun, meditative step.

All you have to do is melt your butter in a large cast iron skillet, add the onions, and stir them as they cook down. You’ll know the onions are caramelized and ready to add to the mashed potatoes when they are golden brown.

How To Use a Stand Mixer to Make Mashed Potatoes

Using a stand mixer to “mash” and combine all the ingredients to make the mashed potatoes is possibly the easiest way of making them.

All you have to do is attach the paddle attachment, add your boiled mashed potatoes, heavy cream, cheese, sour cream, seasonings and herbs to the bowl and mix. The mashed potatoes are soft enough to break up and blend with the other ingredients. Within seconds, you have delicious cream mashed potatoes!

Ingredients

Caramelized Onions

  • 6 tbsp butter
  • 2 onions
  • 1 tbsp thyme
  • 5 sage leaves
  • 1 garlic bulb (minced sautéed)
  • Salt

Mashed Potatoes

  • 5 lbs potatoes
  • 1 1/2 sticks butter
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/3 cup parmesan cheese
  • 1 tsp salt
  • Pepper

Instructions

Caramelized Onions

  1. Melt together 4 tablespoons butter and the onions in a large skillet over medium heat. Cook, stirring occasionally until softened, about 15 minutes.
  2. Add 2 tablespoons butter, thyme, and sage, garlic and season with salt and pepper. Cook another 2 minutes, then remove from the heat.

Mashed Potaotes

  1. Place potatoes in a large stockpot and cover with water; bring to a boil over high heat. Once at a rapid boil, reduce heat to medium-low, cover, and cook for 15 minutes, or until tender enough to pierce with a fork.
  2. Drain the potatoes well. Place potatoes in a large bowl; add in the roasted garlic cloves, butter, sour cream, cheese, heavy cream, salt, pepper and onion mix. Using a handheld electric mixer on low-speed, beat potatoes until light and fluffy. Taste and adjust salt and pepper as needed. Serve warm.
  3. Add the caramelized onions to the potatoes and fold them in using a spatula. Serve with your favorite main dish and enjoy!
