All you need is to throw some chopped veggies and protein of choice in a skillet and cook a portion of rice. Why We Love this Recipe

For several years, stir fry has been one of our weekly go-to meals. One because it is easy and two because it’s our favorite way to use up the extra veggies in the fridge each week. When Friday rolls around, we always seem to have some left over veggies sitting in the fridge that need to be eaten. One of our favorite ways to use up those extra vegetables is to throw them in the skillet and make some stir fry.

What’s in this Recipe?

Fresh chopped veggies: Our favorite veggies to use in our stir fry are broccoli, carrots, purple onion, and bell pepper. But feel free to throw in other veggies like mushrooms, snap peas, edamame, baby corn. Most weeks we make it, we throw in what we can find in the fridge that will complement the dish well.

Shrimp: We love a source of protein in our stir fry and for this recipe, we used ½ a pound of frozen shrimp.  We prefer shrimp because it doesn’t take long to cook at all and tastes great when mixed in the veggies.

Jasmine Rice: Jasmine rice makes the perfect base for this flavorful stir-fry dish. It is quicker to cook compared to some other grain options which creates more ease in making the dish.

Soy Sauce: What would stir fry be without the addition of soy sauce? It adds a lot of flavor and saltiness to the dish removing the need for additional seasoning after cooking.

Olive Oil: The fresh chopped veggies and shrimp were sautéed in extra virgin olive oil. It was our fat of choice for this recipe, but you can substitute with butter or ghee!

Sesame Oil: Sesame oil adds a toasty and nutty flavor to the sweet and savory sauce. The taste of the sesame oil shines through and makes this recipe absolutely delicious.

Honey: Honey is added to the sweet and savory sauce to add sweetness and create a thicker consistency to the sauce.

Ginger: Grated ginger add a spicy kick to the sweet and savory sauce and helps to accentuate and bring together all the flavors in this dish.

Salt, Pepper and Red Pepper: Salt, pepper and red pepper were our seasonings of choice for the sauce. Red pepper is optional, but we love some spice!

Optional Toppings

Green Onions: We topped our stir-fry bowls with chopped green onions which add a fresh flavor.

Cashews: Topping with cashews is optional but we enjoy the crunchy texture it adds to the stir fry.

Easy Weeknight Stir Fry Recipe for Two

Description

An easy weeknight stir fry dinner portioned for a couple people with minimal leftovers.


Ingredients

Units Scale
  • 1/2 lb frozen shrimp
  • 4 garlic cloves
  • 2 large carrots
  • 1/2 onion, sliced
  • 1/2 head of broccoli
  • 1 bell pepper
  • 6 tbsp extra virgin olive oil ((3 Tbsp for veggies and 3 Tbsp for shrimp))
  • 1 tsp sesame oil
  • salt and pepper (to season)

Rice

  • 1 cup uncooked jasmine rice
  • 2 cup water

Sweet and Savory Sauce

  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 2 inch piece fresh ginger, grated
  • 1 tbsp sesame oil
  • 2 tsp corn starch
  • 1 tsp red pepper flakes (*optional but we like spice)


Instructions

  1. In a large saucepan over medium/high heat, add 3Tbsp EVOO and garlic. Sautee for 1-2 minutes and add in chopped veggies. Toss in the oil and reduce to medium heat. Continue to stir every 5 minutes to make sure all veggies get evenly cooked. If you find your garlic is burning while stir-frying reduce heat a little. Cook down until veggies are tender, about 15-20 minutes.
  2. While veggies are cooking, start cooking shrimp and rice. In a second sauce pan over medium/high heat, add 3 tbsp EVOO, 1 tsp of sesame oil, frozen shrimp. Season with salt and pepper and cook until pink and firm.
  3. In a small pot, fill with 1 cup of rice and 2cups of water. Heat on high until rice boils. When it starts to boil, turn off heat, cover with lid and let sit for 10 minutes.
  4. When shrimp and rice are done, set to the side. Ina small bowl, whisk together honey, soy sauce, ginger, sesame oil, red pepper flakes and cornstarch.
  5. Add sauce and cooked shrimp and to the veggie pan, stir to coat and let it simmer for 5-10 minutes until thickens a little.Turn off heat and assemble in bowls.
  6. In a serving bowl, scoop rice, and top with stir-fry mixture. Sprinkle chopped green onions, cashews, sesame seeds, more red pepper flakes.
