When we think of the ultimate comfort food for breakfast, our minds immediately think of chicken biscuits. If you’ve ever had Chick-fil-a’s chicken biscuit, you definitely know what we’re talking about!
You can never go wrong with a classic biscuit and fried chicken, but we wanted to elevate the flavor profile a bit. We wanted a sweet, tangy fried chicken to be paired with a biscuit that was rich and unexpected in flavor. That’s when we landed on cheddar scallion biscuits. It’s a surprisingly delicious pairing, that made us want to “treat ourselves” to a homemade chicken biscuit more often.

Cheddar Scallion Biscuits:
Flour: Without flour, you don’t have a biscuit! We always prefer to use unbleached all-purpose flour when baking.
Baking Powder: Baking powder makes this biscuits super fluffy!
Sugar: A bit of sugar is added to the biscuit dough to give it a bit of sweetness.
Salt: Salt adds flavor to the biscuit dough.
Butter: Butter is the star of any biscuit. You will want to make sure your butter is cold for delicious pockets of butter in each bite.
Milk: Milk helps to combine all the ingredients together.
Cheddar Cheese: Cheddar cheese adds a delicious, rich flavor to the biscuits.
Scallions: We chopped the scallion into small pieces and folded them into the dough. They pair beautifully with cheddar cheese too!
Egg Wash: We brushed egg wash over the top of each biscuit before baking them to give the tops a crispy, golden texture.
Fried Chicken:
Boneless Chicken Thighs: We prefer using boneless chicken thighs when making chicken biscuits, because the meat is more tender and flavorful.
Pickle Juice: We marinated the chicken in pickle juice overnight to give the delicious tangy flavor that’s reminiscent in Chick-fil-a chicken biscuits.
Flour: Flour is the primary coating that gives the chicken a crispy crust.
Seasonings and Herbs: A bit of salt, onion powder, garlic powder, fresh dill and chili powder add delicious flavor to the chicken.
Sugar: A bit of sugar adds some depth and sweetness to the chicken crust.
Corn Starch: Corn starch is the secret ingredient to making crispy fried chicken!
Egg and Milk: Egg and milk create a simple dredge so the flour mixture sticks to it.
How to Make the Cheddar Scallion Chicken Biscuits
Make the Cheddar Scallion Biscuits…
The first step to making the chicken biscuits is to make the biscuits! Biscuits are super simple to make. Homemade biscuits are our go-to, quick breakfast in the morning or for dinner.
We wanted to elevate a classic biscuit by adding additional flavor. We settled on cheddar scallion biscuits, because we knew it would taste delicious with the fried chicken and honey drizzle.
When making biscuits, you always want to use cold butter. This is super important to get those delicious pocket soft butter in each bite.
To create a layered biscuit, we always roll and fold. To do this, start by rolling your biscuit dough out to 1/2 inch thick. Fold the right side into the middle and the left side over the top of it (so the dough folds like a trifold). Repeat this step 3 more times, before cutting out your biscuit rounds.
Fry the Chicken…
To be honest, frying chicken has always scared us. We rarely fry foods, but love eating them as treats every now and then. When we decided on fried chicken for this recipe, we knew we’d have to take a risk and just do it.
We were surprised at how easy it was to fry the chicken with such a thin batter.
Our tip to perfectly fried chicken is to closely monitor the temperature of the oil. We used a deep fry thermometer that attached to our dutch oven, and we made sure that the oil stayed between 325°F-350°F.
Assemble the Chicken Biscuits…
The last and best step is to assemble the cheddar scallion chicken biscuit! Start by slicing a biscuit in half. Place a piece of chicken in between and drizzle the chicken with honey.
We love eating this chicken biscuit with a delicious iced coffee or tea!

Ingredients
Cheddar Scallion Biscuits
- 2 1/2 cups flour
- 1 1/2 tbsp baking powder
- 1 tbsp sugar
- 1 tsp salt
- 1/2 cup cold butter (cubed)
- 1 cup milk
- 1 cup cheddar cheese (shredded)
- 1/3 cup scallions (thinly sliced)
Fried Chicken
- 6 boneless chicken thighs
- 1 cup pickle juice
- 1 cup flour
- 3 tsp salt
- 2 tsp onion powder
- 3 tbsp corn starch
- 1 tsp sugar
- 1/2 tsp chili powder
- 1 tsp garlic powder
- 2 tsp fresh dill
- 1 egg
- 1/2 cup milk
Instructions
Cheddar Scallion Biscuits
- Preheat oven to 425°F. Line baking sheet with parchment paper.
- In a medium size bowl, whisk flour, baking powder, sugar and salt together.
- Add cold cubed butter and cut into the flour mixture with a pastry cutter. Make a well in the flour, pour the milk into the well and mix with a fork until combined.
- Fold in cheese and scallions to the dough, until both are evenly distributed. Turn dough out onto a floured surface and roll out into a 1/2 inch rectangle. Fold the dough into thirds (left side over and right side over the top). Then roll out the dough again and repeat 3 more times.
- Using a round biscuit cutter, cut out as many biscuits as the dough can make. (it should make about 12 biscuits).
- Place the biscuits on the baking sheet, brush with egg wash, and bake for 15 minutes, or until cooked through.
Fried Chicken
- In a gallon ziplock bag, add pickle juice and chicken thighs. Marinate the chicken overnight or for at least 4 hours.
- In a shallow bowl add flour, salt, onion powder, corn starch, chili powder, garlic powder and fresh dill. Whisk to mix. In another shallow bowl, whisk egg and milk together.
- One at a time, take a marinated chicken thigh and dredge it in the milk/egg mixture. Then coat it with the flour mixture. Place the chicken on a plate and repeat for the remaining chicken thighs.
- In a dutch oven, add 1 1/2 inches of oil. heat over medium to 325°F. Once temperature is met, add two chicken thighs at a time to the oil. Cook for 8-9 minutes or until the internal temp. is 165°F. Once the chicken is done frying, transfer to a wire rack or paper towel lined plate.
- To assemble the chicken biscuits, cut a biscuit in half, place a chicken thigh on top of one half, drizzle with honey and place the top on the chicken.
- Serve and enjoy with an iced coffee or morning tea!
