  • Chicken tenders: Chicken tenders are a great when you're on a time crunch for cooking. The smaller pieces cook quicker. For this recipe, we cut the tenders into chunks and they cook in just about 10 minutes.

  • Broccoli: A yummy way to get some veggies in is to throw them in your stir fry and toss them in some ginger chicken sauce. Win win, you get your greens and a yummy dinner.

  • Shallot: When shallots are sautéed, they become sweeter. The sweet flavor balances well with the saltiness of the soy sauce and the spice of the ginger.

  • Soy Sauce: One of the base ingredients for the ginger chicken sticky sauce and adds a nice amount of saltiness to the dish.

  • Honey: Many sticky sauces call for brown sugar, but we like the taste and consistency honey adds the the ginger chicken sauce.

  • Sesame Oil: Sesame oil adds a nice nutty flavor to the sauce and just a small amount is needed to get the job done.

  • Fresh ginger: The star ingredient, so...the more the better! Ginger gives this sauce an insane punch of tang and spice to the dish.

  • Five-spice Powder: Five spice is a delicious Chinese spice blend of peppercorns, anise, cinnamon, cloves and fennel. If you do not have five-spice on hand, you can substitute for all spice. Although it won't give you all the flavor of five-spice, it will give the sauce some similar notes.

Description

Chicken tenders sautéed in a  spicy and tangy ginger chicken sauce, served over a warm bowl of rice and broccoli.

Ingredients

Scale

2 tbsp olive oil

1 lb chicken tenders, cubed

1/3 cup soy sauce

2 tbsp honey

2 tsp sesame oil

2 inch piece of ginger, peeled and minced

3 garlic cloves, minced

1/2 tsp 5 spice powder

1/2 tsp red pepper flakes

1 tbsp corn starch

1 shallot, thinly sliced

1 head of broccoli, chopped (or 1 cup of chopped broccoli)

Instructions

  1. Start by making your spicy ginger sauce: Pour soy sauce, honey, sesame oil, minced ginger and garlic, 5 spice, red pepper flakes and corn starch into a bowl. Whisk together until combined and set aside. Now, start making your rice and chicken.
  2. Next, cook rice in a small sauce pan according to the package instructions. Once rice is prepped and cooking, start cooking the chicken.
  3. Pour oil in a skillet over medium heat, and cook chicken tender nuggets for 4-5 minutes on each side, until cooked through. Internal temperature should reach 165°F. Remove from heat and pour chicken into a paper towel-lined bowl.
  4. In a new skillet, over medium heat, sauté shallots and broccoli until they start to become a little tender. Pour chicken back into the pan and then pour your sauce over the chicken, reducing heat to simmer and thicken for about 8-10 minutes.
  5. Assemble a bowl with rice and put a heaping scoop of chicken and broccoli over the rice and top with chopped green onions, red pepper flakes, and slivered almonds.
