- 5 eggs
- 1 cup full-fat coconut milk (canned)
- 2 tsp umami seasoning
- 8 baby bella muchsrooms (chopped)
- 4 garlic cloves (minced)
- 1 cup fresh spinach
- 1 frozen vegan pie crust
Instructions
- Preheat oven to 350.
- Chop mushrooms and garlic and sauté in coconut oil for 3 mins. Add salt and pepper as the vegetables sauté. Remove from heat after mushrooms are lightly browned.
- Whisk eggs, coconut milk, and umami spice together in a medium size bowl.
- Pour mushrooms into the bottom of the crust. Add chopped spinach. Pour egg mixture on top.
- Cook for 45 mins. Allow quiche to sit for 10 mins.
