All the bold flavors of tex-mex are packed in these delicious Spicy Bacon Egg and Cheese Tex-Mex Breakfast Sandwiches.

- 4 bakery croissants
- 2 tomatoes (sliced)
- 4 eggs
- 8 strips bacon
Spicy Avocado Spread
- 3 avocados (mashed)
- 1 jalapeno seeded (minced)
- 1/3 cup fresh cilantro (chopped)
- 1 lime (juiced)
- salt and pepper (to season)
Instructions
- Start by making your avocado spread. In a medium bowl, mash your avocado and them add the chopped cilantro, minced jalapeño, cumin and salt and pepper. Mix together and set aside while you make the eggs and bacon.
- In a cast iron skillet, over medium heat lay your strips of bacon on the pan. Cook for 4-5 minutes on each side until they are crispy and cooked through. Place the bacon on a plate lined with paper towels to catch the grease. Cook the rest of the bacon and pat dry.
- Using the same skillet, with the bacon grease still in the pan, crack your eggs in the pan. Fry on one side for several minutes until the whites are cooked through. Gently flip the egg over and cook on the other side, careful not to break the yolk. Cook for an an additionally 3-4 minutes on the opposite side. Remove from the heat.
- Warm the croissants in in a warmed 200°F oven or in your microwave for 20 seconds.
- Slice the warmed croissants in half and assemble your the tex-mex sandwiches. Start by spreading a thin layer of avocado spread on each face of the sandwich. Layer bacon, egg, and tomato slices and sandwich with the top of your croissant.
