- 12 oz smoked sausage, sliced
- 3 tbsp olive oil
- 1 onion, diced
- 5 garlic cloves, minced
- 2 large carrots, chopped
- 3 celery stalks, chopped
- 2 tbsp tomato paste
- 1 tbsp Italian seasoning
- 5 cups chicken broth
- 24 oz can crushed fire roasted tomatoes
- 1/3 cup heavy cream
- 16 oz tortellini pasta
- 2 cups dino kale, chopped
Instructions

- In a dutch oven or large pot, over medium heat, add olive oil, chopped onion, carrots, celery and garlic cloves. Sauté until soft.
- Stir in tomato paste, Italian seasoning and let it simmer for a couple minutes more.
- Add in sliced smoked sausage and stir around mixture. Let the sausage warm and brown a bit.
- Pour in can of crushed tomatoes and chicken broth. Let everything simmer and get nice an bubbly.
- Add in tortellini to the pot and cook for several minutes before adding the kale.
- Stir in kale and heavy cream. Let it simmer for a couple more minutes before serving.
- Pour into bowls and serve.
Notes
If you have leftovers, tortellini may absorb the moisture and become a bit mushy when reheated.
