Looking for a super easy side dish for your next get-together? Try this caprese salad! It is a light and fresh salad that bursts with flavor from the fresh herbs and cherry tomatoes. And, it pairs perfectly with just about any main dish.

A couple summer’s ago, we had a thriving cherry tomato plant growing more tomatoes than we could keep track of. It was producing tomatoes from June to September and we were making lots of dishes with tomatoes. Needless to say, this salad has became one of the summer favorites that year. Since then, every time summer rolls around, we find ourselves craving this bright delicious salad.

This salad is honestly the easiest salad to make. All it takes is a little bit of chopping and spreading on your serving dish.

We love using the smaller cherry tomatoes and mozzarella pearls for this salad because you are able to get all the flavors in each bite. We prefer the sweeter taste of cherry tomatoes versus larger tomatoes in our caprese salad. The topping with fresh basil makes this salad taste and smell so yummy!! All the ingredients complement eachother so well!

Description

Small cherry tomatoes, mozzarella pearls and fresh basil make this simple caprese salad light and fresh. The easiest salad and the perfect side dish for a gathering.


Ingredients

Units Scale
  • 10 oz container medley cherry tomatoes (sliced in half)
  • 8 oz package mozzarella pearls
  • 1/2 cup fresh basil
  • olive oil (to drizzle)
  • balsamic vinegar (to drizzle)
  • salt and pepper (optional, to taste)


Instructions

  1. On a cutting board, slice cherry tomatoes in half. If you choose you want to chop basil, do that now as well.
  2. On your platter, arrange sliced tomatoes, mozzarella pearls and basil.
  3. Drizzle the salad with extra virgin olive oil and a couple spoon fulls of balsamic vinegar. Balsamic vinegar can be a very strong flavor, so we tend to add less.
  4. Lightly season with salt and pepper if you with to add some extra flavor.
