- 1 sheet frozen puff pastry (thawed)
- 5 figs (sliced)
- 5 oz cream cheese
- 3 tbsp honey
- 1 sprig rosemary
- 1/4 tsp cardamom
- 1 egg (for egg wash)
- demerara sugar (for garnishing the edge of the pastry dough)
Instructions
- Preheat the oven to 400 degrees F. Set out puff pastry to thaw.
- Mix the cream cheese, honey, rosemary and cardamom until combined. Cut fresh figs into slices. We cut them about a 1/4 inch thick.
- On a lightly floured surface, roll the puff pastry out into a rectangle about 1/4 inch thick. Transfer the pastry on a parchment lined baking sheet and spread the cream cheese mixture over the dough, leaving a 1 inch border.
- Arrange the figs in rows on top of the cream cheese. Fold the edges of the puff pastry over the figs.
- Whisk an egg and brush the egg was over the crust. Sprinkle the crust with Demerara sugar.Drizzle the top with 1 tablespoon of honey.
- Transfer to the oven and bake for 25-35 minutes or until golden brown. It's OK if the edges get dark, and they will get dark.
- Let it cool slightly and then serve. Enjoy with a hot cup of coffee, cappuccino or hot tea.
