What’s in this recipe?

Puff Pastry: We love light and buttery the puff pastry crust makes this galette. It’s certainly not a traditional galette dough, but it tastes delicious and makes this recipe so much easier to make!

Cream Cheese: The cream cheese gives this galette a delicious creamy filling. It’s almost like you’re eating a cheese danish.

Sprig of Rosemary: Just one sprig of rosemary infused into the cream cheese is enough to add a delicious fresh flavor to this galette.

Honey: Honey adds sweetness to the tart cream cheese and pairs so well with the rosemary and fig.

Cardamom: Cardamom pairs so nicely with figs, and adds a bit of spice to cut through the sweetness of the figs.

Figs: The figs are the star of the show and make a beautiful layered garnish on top of the cream cheese layer.

Egg Wash: We love adding egg wast to pastry dough crust. It make the dough glisten and adds a crunchy edge.

Demerara Sugar: A sprinkle a Demerara sugar over the egg wash adds sweetness to the buttery crust.

How to Make the Rosemary Honey Fig Galette

This rosemary honey fig galette is SO easy to make! It’s will definitely become one of our go-to quick desserts to make for a dinner party or brunch with friends.

Start by thawing out your frozen pastry dough. You will want it to soften as you prepare the rest of the ingredients. Then preheat your oven to 400°F.

In a small mixing bowl (we love these from Crate & Barrel), mix 5 ounces of cream cheese, honey, rosemary and cardamom until all the ingredients are well combined. This works better when your cream cheese has softened a bit on the counter.

Time for the Fig Filling

Next, slice 5-6 figs. You’ll want just enough to cover the cream cheese fillings, so depending on the size of the figs you may need more or less.

Once the puff pastry has thawed some, roll out the puff pastry on a lightly floured surface. Then transfer the pastry dough onto a parchment lined baking sheet. Spread the cream cheese mixture over the dough, leaving a 1 inch border. You do this so that you can fold the edge over the fruit. They will puff up some in the oven, so 1 inch width is perfect.

Then, arrange the sliced figs in layered rows on top of the cream cheese, and fold the edges over the figs.

Make the Egg Wash

Egg wash has a weird ring to it, but all it is is beaten egg that you paint onto the edge of the crust.

Simply beat an egg and brush it on with a basting brush (we love this one from Amazon). Sprinkle Demerara sugar over the egg wash to give it a beautiful sweet crunch and texture as it bakes.

Lastly, drizzle 1 tablespoon of honey over the figs. Transfer the rosemary honey fig galette to the oven and bake for 30 minutes or until the edges are golden brown. It’s okay if the edges are dark, because they will get dark!

Once it’s done, allow it to cool for a few minutes. It’s so much better served hot with a cup of coffee or tea!

Ingredients

  • 1 sheet frozen puff pastry (thawed)
  • 5 figs (sliced)
  • 5 oz cream cheese
  • 3 tbsp honey
  • 1 sprig rosemary
  • 1/4 tsp cardamom
  • 1 egg (for egg wash)
  • demerara sugar (for garnishing the edge of the pastry dough)

Instructions

  1. Preheat the oven to 400 degrees F. Set out puff pastry to thaw.
  2. Mix the cream cheese, honey, rosemary and cardamom until combined. Cut fresh figs into slices. We cut them about a 1/4 inch thick.
  3. On a lightly floured surface, roll the puff pastry out into a rectangle about 1/4 inch thick. Transfer the pastry on a parchment lined baking sheet and spread the cream cheese mixture over the dough, leaving a 1 inch border.
  4. Arrange the figs in rows on top of the cream cheese. Fold the edges of the puff pastry over the figs. 
  5. Whisk an egg and brush the egg was over the crust. Sprinkle the crust with Demerara sugar.Drizzle the top with 1 tablespoon of honey.
  6. Transfer to the oven and bake for 25-35 minutes or until golden brown. It's OK if the edges get dark, and they will get dark.
  7. Let it cool slightly and then serve. Enjoy with a hot cup of coffee, cappuccino or hot tea.
