- 1 large sweet potato
- 1 zucchini
- 3–4 tricolored carrots ((feel free to use regular carrots as well))
- 1/2 onion
- 5–6 mini bell peppers
- 1/4 cup coconut oil ((olive oil is great too!))
- 1 fresh clove of garlic, diced
- salt + pepper to taste
- 1 tsp thyme
- dash of red pepper flakes
- 3 tsp Trader Joe's Umami Seasoning (optional)
Instructions
- Preheat oven to 425 F degrees.
- In a small mixing bowl, whisk together the oil and spices.
- Using a cutting board and sharp knife, chop the vegetables and place them on the large baking sheet.
- Pour the seasoning mixture over the vegetables and toss to evenly spread the seasoning around.
- Bake for 15 minutes. After time is up, toss the vegetables. Roast for another 15 minutes.
