Reese’s Peanut Butter Brownie Dessert Bars

Description

A rich and gooey brownie base, topped with scoops of peanut butter cookie dough and melty Reese’s cups.


Ingredients

Peanut Butter Dough

  • 1/2 cup butter, room temp
  • 1/2 cup creamy peanut butter
  • 1 cup light brown sugar
  • 2 tbsp granulated sugar
  • 1 egg, room temp
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cornstarch

Brownie Batter

  • 1 stick butter
  • 6 oz chocolate chips, plus 4 oz chocolate chips (for mixing into the batter)
  • 1 1/2 cups sugar
  • 3 eggs
  • 1/4 cup black cocoa powder
  • 1/2 tsp salt
  • 1/2 cups, 2 tbsp flour
  • Mini Reese’s PB cups


Instructions

  1. Preheat oven to 350ºF. Butter pan and line with parchment paper.
  2. Make Peanut Butter Dough. In a small mixing bowl, whisk together flour, baking soda, salt and cornstarch. Set aside for later.
  3. In a stand or hand mixer, cream together butter and peanut butter. Mix until combined. Add in sugar and light brown sugar. Mix until combined.
  4. Add egg and vanilla to the butter mixer and mix until just combined.
  5. Mix in the flour mixture into the wet ingredients. Once the dough has just mixed together, it’s time to marble the dough.
  6. Make Brownie batter. In a small saucepan over low heat, melt butter and chocolate chips. Remove sauce pan from heat until it is just melted.
  7. Remove from heat and whisk in sugar and eggs, one at a time. Pour into a medium bowl and mix in cocoa powder and salt. Next add in flour and fold into the batter with a spatula until the flour is fully mixed in.
  8. Pour brownie batter in pan. Add dollops of dough on top. Sprinkle chopped Reese’s on top.
  9. Bake for 40-45 minutes until cooked through. Check doneness with fork or toothpick.
  10. Let bars cool for at least 15 minutes. Slice and serve.
