Description

Spinach Feta Bites, Provolone Prosciutto Twists, Rosemary Berry Cream Cheese Rolls


Ingredients

Spinach Feta Puff Pastry Bites:

  • 3 garlic cloves
  • 3 green onions (thinly sliced)
  • 1/2 cup avocado mayo
  • 1 bag spinach
  • 1 cup feta crumbles
  • fresh ground pepper (for seasoning)
  • 1 sheet puff pastry
  • 1 egg beaten (for egg wash)

Prosciutto Provolone Puff Pastry Twists:

  • 1/4 cup dijon mustard
  • 1 tbsp Worcestershire Sauce
  • 1 pkg prosciutto
  • 1 pkg provolone slices
  • 1 sheet puff pastry
  • sesame seeds and poppy seeds (for topping)
  • 1 egg (beaten for egg wash)

Rosemary Berry Cream Cheese Puff Pastry Rolls:

  • 4 oz cream cheese (slightly softened)
  • 1 jar wild berry preserves
  • 23 sprigs rosemary (chopped)
  • 1 sheet puff pastry
  • 1 egg (beaten for egg wash)


Instructions

Spinach Feta Puff Pastry Bites:

  1. Preheat oven to 400°F. Line cookie sheet with parchment paper.
  2. In small pan over medium-low heat, start by heating garlic and chopped green onions in 1 tbsp olive oil until fragrant. Add in 2 cups of spinach to warm and wilt. Remove from heat and set aside.
  3. Roll out your thawed puff pastry dough and cut into 12 even squares. Spread a thin layer of avocado mayo on the thawed puff pastry.
  4. Pour and spread your garlic, green onions and wilted spinach. Top with feta cheese crumbles and fold up the edges of the puff pastry dough around the center filling. 
  5. Place each square onto parchment paper lined sheet and brush with egg wash. Place in oven and cook for 15 minutes or until golden brown. 

Prosciutto Provolone Puff Pastry Twists:

  1. Preheat oven to 400°F. Line cookie sheet with parchment paper.
  2. In a small bowl. Add your dijon mustard and Worcestershire Sauce. Whisk together until combined. 
  3. Then, roll out your thawed puff pastry dough and spread on a thin layer of the mustard mixture.  Add a layer of provolone cheese slices and then prosciutto on top. Using a pizza cutter, cut thin slices vertically. 
  4. To make the twisty shape, fold the dough down on one end, and twist the dough and filling, folding the other end down to hold the shape. Twist the rest of the dough strips and transfer them to a parchment-paper-lined baking sheet.
  5. Brush the twists with egg wash and sprinkle poppy seeds and sesame seeds on top. Bake the twists for 15 minutes.

Rosemary Berry Cream Cheese Puff Pastry Rolls:

  1. Preheat oven to 400°F. Line cookie sheet with parchment paper.
  2. Soften your cream cheese in the microwave for 20 seconds. You don’t want it super soft, but just enough to make it spreadable.
  3. Then roll out your thawed puff pastry dough, spread a thin layer of cream cheese, a thin layer of wild berry preserves, and sprinkle with freshly chopped rosemary.
  4. Starting at the long end of the pastry dough, roll the dough like you would cinnamon rolls. Then, using. Ashram knife, cut the rolled dough into 1 inch rolls. Place them on a parchment-paper-lined baking sheet, brush with egg wash and bake in the oven for 15 minutes.
