Loaded Peanut Butter Oreo No-Churn Ice Cream
What you’ll need…
Sweetened condensed coconut milk: This recipe isn’t entirely dairy free, but we decided to use coconut condensed milk for this recipe. It is very comparable to regular condensed milk. Adds sweetness and a smooth and creamy texture to the ice cream
Heavy Cream: Makes the ice cream SO creamy and light in texture!!
Vanilla:Adds a nice hint of vanilla to the ice cream base.
Salt: Just a bit of salt is added to to balance the sweetness of the cream mixture.
Oreos: Arguably the best ice cream mix-in! We added a very healthy amount of oreo crumbles to this recipe because we wanted to taste it in every bite.
Peanut butter: You want to use a creamy peanut butter. We prefer an organic or natural peanut butter because it doesn’t have any added sugars and is less sweet. If you use a peanut butter spread like Jif or Peter Pan, make sure to melt the peanut butter a bit to make it a good texture for making the peanut butter swirls.
Salted roasted peanuts: You can opt for unsalted but we like the bit of saltiness that salted roasted peanuts give the ice cream.
Mini chocolate chips: Because if Oreos, peanut butter and peanuts weren’t enough, we added in more chocolate. It just adds a fun texture and surprise to each bite.
How to make no-churn ice cream
It’s super simple it’s dangerous!! All you need is an electric mixer, heavy cream, condensed milk/coconut milk and your ice cream mix-ins!!
1. Make your whipped ice cream base.
Start by pouring heavy cream into a high powered blender with whist attachment. Whisk on high speed until whipping cream forms stiff peaks. Next, remove the whipped cream from the blender and fold in your condensed milk with a rubber spatula until both are combined.
2. Prepare your ice cream mix-ins.
Although we have measurements and we do feel there are great ratios of each, those are just suggestions! Feel free to make it your own!! The fun things about making this ice cream is you can add more or less of each mix-in to make it exactly how you like it.
Measure each of these out into bowls for easy layering:
- Oreos (1/2 cup) : Both crushed and crumbled pieces! We prefer to smaller pieces because the make the ice cream easier to scoop.
- Peanut Butter (1/2 cup) : We recommend an organic or natural peanut butter because it doesn’t have any added sugars and is less sweet. They typically require stirring to mix in natural oils that have settled on the top, but the texture should be runny enough to drizzle and swirl.
- Note: If you use a peanut butter spread like Jif or Peter Pan, make sure to melt the peanut butter a bit to make it a good texture for making the peanut butter swirls.)
- Salted Roasted peanuts (1/4 cup)
- Mini chocolate chips (1/4 cup)
3. Add the mix-ins!
First fold in the roasted peanuts and mini chocolate chips. We chose to fold these two ingredients into the ice cream rather than layering them so that they were evenly mixed throughout.
Next, you’ll make your swirls of oreo and peanut butter.
In a loaf pan, spread half of the whipped ice cream mixture in an even layer. Drizzle with peanut butter and sprinkle half of your oreos ontop. Using a knife, swirl the peanut butter and oreos into the mixture in a squiggle motion. Repeat this step for the second half of the ice cream.
Lastly, top with extra oreo crumbles, peanut butter drizzle and peanuts.
4. Chill, wait and enjoy!
Place your beautiful ice cream creation in the freezer to solidify. The ice cream will need to freeze for at least 6 hours before you can enjoy!
