Description

These Peanut Butter Chocolate Chip Muffins are soft, fluffy, and packed with melty chocolate chips and chopped peanuts. Made with sour cream for a tender crumb, they’re the best peanut butter muffins for breakfast or snacking.


Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 1/2 cup sour cream
  • 1 tsp vanilla
  • 1 cup creamy peanut butter spread
  • 3/4 cup mini chocolate chips
  • 1/3 cup peanuts, finely chopped


Instructions

  1. Preheat oven to 350ºF and line muffin tin with cupcake liners.
  2. In a medium bowl, add flour, baking powder, and salt. Whisk the dry mixture until all the ingredients are incorporated.
  3. In a large bowl, mix eggs, sugar, butter, milk, vanilla, peanut butter and sour cream together.
  4. Mix dry ingredients into the wet mixture. Then gently fold chocolate chips.
  5. Using an ice cream scoop or 1/4 measuring cup, scoop batter into a prepared muffin tin (you can grease the pan or add liners). Add chopped peanuts to the top of each muffin.
  6. Bake for 20-25 minutes. Remove the muffins from the oven and let them cool for 10 minutes.
