Description
One version is a creamy mint chocolate dream made with swirls of dark chocolate and green minty white chocolate and topped with chopped andes mints. The second is a classic peppermint bark and with layers of dark and white chocolate and topped with crushed candy cane for a nice minty crunch.

Mint Chocolate Bark
- 12 oz (2 cups) semisweet chocolate chips
- 6 oz (1 cup) white chocolate chips
- 1 tsp coconut oil
- 1 tsp peppermint extract
- 2 drops green food coloring
- 1/4 cup Andes mints , chopped
Candy Cane Chocolate Bark
- 12 oz (2 cups) semisweet chocolate chips
- 6 oz (1 cup) white chocolate chips
- 1 tsp coconut oil
- 1 tsp peppermint extract
- 1/3 cup candy cane, crushed
Instructions
- Line rimmed cookie sheet with wax paper and set aside.
- In a double boiler over medium heat or in microwave (see tips below for melting chocolate in microwave), melt semi sweet chocolate chips. Stirring continuously until smooth.
- Pour semi sweet chocolate onto cookie sheet and spread it to about 1/4 inch thickness with a rubber spatula or the back of a spoon.
- Repeat steps 2 and 3 to two more times for each white chocolate mixture. After your white chocolate is melted, add in peppermint extract (and green food coloring the mint chocolate bark).
- Pour the minty green white chocolate mixture over the dark chocolate layer with your spatula. Using the tip of a knife, draw swirls in the chocolate. While still melted, sprinkle with candies mints. Next make the candy cane bark, carefully pour the white chocolate on top of the remaining half of your chocolate square. Gently spread over the entirety of the bottom chocolate layer, careful not to disrupt the layers too much. Sprinkle the top with crushed candy canes.
- Refrigerate for at least 30 minutes until the chocolate is firm.
- Remove the bark from the pan, peeling off the wax paper. Cut or break the bark with your hands into pieces. Store in an airtight container in the refrigerator.
Notes
Note: If you’re using a microwave to melt chocolate, heat in microwave-safe bowl in 30 second increments, stirring between, until chocolate is smooth and melted.
