These are just like the Eggo Mini Pancakes you ate as a kid, but elevated a bit!

- 1 cup flour
- 1 tbsp sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 3/4 cup almond milk
- 3 tbsp butter
- 1 egg
- 2 tsp vanilla
Instructions
- Preheat skillet or griddle on medium/low heat.
- Whisk the almond milk, egg, melted butter and vanilla in a bowl until combined.
- Then, in a separate bowl, whisk flour, sugar, baking powder, salt and cinnamon until well combined.
- Add your wet ingredients into your dry ingredients and whisk until fully combined.
- Use a tablespoon to scoop out the batter onto the skillet to make the mini silver dollar sized pancakes. Flip the pancake once the edge star to cook and little bubbles form. Once they are cooked, remove the pancake from the heat and place them onto a plate.
- Enjoy on a breakfast charcuterie board with your favorite toppings or however you like them!
