If you haven’t heard about the “crookie”, allow us to introduce you to one of the most delicious desserts you will ever eat. It’s a buttery croissant, sliced in half, stuffed with chocolate chip cookie dough and topped with even more chocolate chip cookie dough. Can you think of anything more delicious?

We wanted to create our own twist on this pastry and thought it would neat to make them miniature. This makes them the perfect dessert for a casual dinner party with friends or a for a treat during movie night with your girl friends. Plus, they are super simple to make!

What is a Crookie or Cookie Croissant?

A “crookie” is another word used to refer to the chocolate chip cookie croissant.

Cookie + croissant = Crookie

While the crookie has gone viral on Tiktok in recent weeks, it did not originate on Tiktok. The idea actually originated from a small bakery in Paris, France, called Maison Louvard. However, the delicious creation has made it’s way to America, and people can’t get enough.

What’s in a Chocolate Chip Cookie Croissant?

There are essentially only two ingredients in a cookie croissant: croissants and chocolate chip cookie dough. Here are some tips when sourcing your ingredients:

How to Make the Cookie Croissant

Bake Croissants. If you bought frozen croissant dough, you’re going to want to make the croissants first and let them cool. Follow the directions on the box to bake.

Make the Cookie Dough. While the croissants are baking, make the chocolate chip cookie dough.

Slice and Stuff. Once the croissants and cookie dough are ready to go, its time to assemble the crookie. Start by slicing the croissant, stuff some cookie dough inside and press down gently to help the top and bottom stick together. Then, top the croissant with some more cookie dough.

Bake the Cookie Croissants. Bake the cookie croissants at 350ºF for 12 minutes. Let them cool for a few minutes, and enjoy!

Want to make a single serve crookie? It’s super simple to do, and could make a delicious late night snack.

Ingredients:

One Mini Croissant

2 Premade Cookie Dough Balls (store-bought or homemade from this recipe)

How to Make the Single Server Cookie Croissant

Make the cookie croissant just as you would if you were making a large batch. Bake on 350ºF for 12 minutes, let it cool for a few minutes, and enjoy with a cup of coffee or tea.

Ingredients

Chocolate Chip Cookie Dough

3 cups all purpose flour

1 tsp salt

1 tsp baking powder

2 sticks butter (chilled)

3/4 cup brown sugar

1/4 cup white sugar

2 eggs

1 tsp almond extract

1/2 cup mini chocolate chips

12 Mini Croissants (Store-bought or Frozen Dough*)


Instructions

*If you’re using frozen croissant dough, follow the instructions on the package to bake them to perfection. Once they are done baking, begin following instructions here*

Make the Chocolate Chip Cookie Dough

  1. In a medium bowl, gently whisk together your flour, salt, baking powder. Set aside for later.
  2. Cube your chilled butter and toss in a standing mixer bowl. On low speed, cream your butter until it is a whipped texture.
  3. Add in your sugars and mix on medium speed until creamed together. Make sure all butter is evenly blended into the sugars.
  4. Add two eggs and almond extract to the creamed butter and mix on medium-high speed. Pour in your flour mixture in 1/3 portions, waiting to make sure the flour mixture is incorporated completely before adding more.
  5. Once your mixture is fully blended together, remove mixing bowl from the stand mixer. Add in your mini chocolate chips and mix until just combined.
  6. Wrap dough in cling plastic wrap and place in freezer for 30 minutes to chill.

Assemble the Cookie Croissants

  1. Preheat oven to 350ºF. Line baking sheet with parchment paper or Silpat mat.
  2. Slice the baked croissants in half. Stuff about 2 tbsp of cookie dough inside the croissant. Gently press down on the top to close it. Top the croissant with more cookie dough (about 1-2 more tbsp).
  3. Place 6 at a time on a cookie sheet (about 3 inches apart), bake for 12 minutes. If you like a gooeier, underbaked cookie, bake the them for 8 minutes.
  4. Remove from oven and allow to cool for a few minutes. Enjoy with a cup of coffee or tea!
