Luck of the Irish Shamrock Egg in Toast

A festive take on and egg-in-a-hole meets avocado toast for this St. Patrick's day Shamrock breakfast! Toasted bread with an egg in the center, topped with mashed avocado. YUM!

Ingredients

  • 1 slice Ezekiel bread ((or your favorite type of bread))
  • 1 tsbp butter
  • 1 egg
  • 1/2 avocado (mashed)
  • everything but the bagel seasoning

Instructions

  1. Heat the frying pan up to medium heat and melt 1 tbs of butter in the pan. While the pan is heating up, prepare the toast.
  2. To prepare your piece of toast, use the shamrock cookie cutter to cut a shamrock shaped hole in your piece of bread. Remove the cut out from the bread (you can toast this piece as well).
  3. Place both pieces of the bread in the frying pan. Crack the egg into the shamrock hole.
  4. Once the one side of the egg is cooked through, flip your piece of bread to cook the other side of the egg and toast the bread as well.
  5. Once your egg and toast are cooked to your preference, plate the toast. This is when you can add avocado. We like to top our toast with salt, pepper, Everything But the Bagel Seasoning from Trader Joes, and crushed red pepper.
