We love any excuse to get festive for the little holidays! And if that involves Matcha and pancakes, even better! We are sharing an Easy St. Patrick’s Day Recipe, Leprechaun Green Matcha Pancakes

You’ve heard of green eggs and ham…but have you heard of GREEN PANCAKES!? These pancakes are fluffy, full of flavor and so festive for St. Patrick’s Day! The green color comes from the matcha powder added to the mix. As you’ll come to find out, we are pretty much addicted to matcha and love any excuse to be able to use it in our recipes!

What is matcha? Matcha green tea powder is traditionally used to make matcha green tea beverages. However, it can also be a great addition to sweet treats and baked goods. The tea powder and matcha drinks have become increasingly popular in western culture over the past decade. Additionally, there has been a large health movement with matcha, as it is a great source of antioxidants, which have anti-inflammatory benefits.

What is does matcha taste like? Some may say that matcha tastes like leaves or grass. Which is a great observation, and can turn people off from trying matcha in different ways. For some people matcha can be an acquired taste, but we guarantee you, these matcha green tea pancakes are a treat!! The flavor of the matcha powder is a surprisingly good addition to baked goods.

Today we are getting in the spirit of St. Patricks day and sharing our Leprechaun Green Matcha Pancakes. All you will need is a box of your favorite pancake mix and some matcha powder. For our recipe we used Roby’s Pancake mix, from Williams Sonoma, it is our favorite. Another one of our favorite pancake mix brands is Kodiak Cakes!

Description

These green matcha pancakes are fluffy and festive for a yummy St. Patricks Day Breakfast! The green color comes from the addition of matcha green tea powder!


Ingredients

Units Scale
  • 1 cup Robbie's Pancake Mix
  • 1 tbsp matcha powder
  • 1 tbsp butter

Toppings

  • 2 bananas (sliced)
  • drizzle golden maple syrup ((or honey))


Instructions

  1. Turn stove top burner to medium-high heat & start warming skillet pan and butter. Start to prepare the pancake mix.
  2. Prepare your pancake mix as instructed on the package.
  3. Once the pancake mix is ready, whisk in 1 tbs of matcha powder until fully combined. Be careful not to over-mix the batter.
  4. Scoop pancake batter onto pan. I normally use a 1/4 cup measuring cup to scoop my batter onto the skillet. It seems to make the perfect sized pancake.
  5. Continue to scoop and cook pancakes until all the batter has been used.
  6. Plate pancakes. Top with syrup, honey, fruit or other desired toppings.

Notes

Festive Toppings: Top with GOLDEN maple syrup or honey. Slice a banana and top the pancakes with banana slices. They can resemble golden tokens.
