Description
A zesty twist on sugar cookies. Each cookie is soft chewy and bursting with bright lemon flavor – from the lemon zest and juice in the cookies to the lemon sugar coating on each cookie. Sure to be a hit!

- 3 cups flour
- 2 cups granulated sugar (plus extra for rolling)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 sticks cold butter, cubed
- 2 large eggs, room temperature
- 1 tsp vanilla
- 2 tbsp lemon zest
- 2 tbsp lemon juice
Instructions
- Preheat oven to 350°F. Prep cookie sheet with parchment paper.
- In a medium bowl, whisk together flour, sugars, baking powder, baking soda, salt and 1 tbsp lemon zest.
- Add in cold butter and beat on medium until combined. Beat in eggs and vanilla and lemon juice.
- Add in flour mixture and beat until blended into a dough.
- Scoop large cookie dough balls onto a rimmed cookie sheet in rows. Freeze in the fridge for 15 minutes. Chilling the cookies will set the dough and decrease spread in the cookies when baking.
- While the dough is chilling, make lemon sugar. Pour 1 cup of sugar in a bowl with 1 tbsp lemon zest. Stir together to blend. Before you bake the cookies, roll each dough ball in lemon sugar and place them on a baking sheet.
- Bake cookies for 12-15 minutes. Transfer cookie sheet to wire rack and let cool before eating.
