Homemade Whipped Marshmallow Cream

  • 1 egg white
  • 1/4 cup sugar
  • 1/8 tsp cream tartar
  • 1/2 tsp vanilla

Iced S'mores Latte

  • 2 shots espresso
  • 1/2 tsp cocoa powder
  • 1/2 cup ice cubes
  • 1/2 cup oat milk
  • 3 heaping spoonfuls whipped marshmallow cream
  • 1 crushed graham cracker
  • 1/4 cup chocolate chips, melted


Instructions

How to Make the Whipped Marshmallow Cream

  1. Heat 3 cups of water in a pot. While the water is heating up, add the egg white, sugar and cream of tartar to a heat-resistant bowl.
  2. Once the water begins to boil, place the bowl on top and whisk until the sugar dissolve and the mixture starts to look frothy. Remove from the heat whisk in the vanilla.
  3. Transfer the mixture to a stand mixer or a hand held mixer, and whisk for about 5 minutes or until soft peaks form. Set aside to put on top of the drink.
  4. This recipe makes enough marshmallow cream for about 2 lattes. If you have extra marshmallow cream left over, you can store in the fridge for two days.

How to Make an Iced S'mores Latte

  1. Melt the chocolate in the microwave, stopping every 30 second to stir, until the chocolate is completely melted. Crush the graham cracker in a bag and pour into a shallow bowl.
  2. Grab the glass you want for your drink and roll the rim in melted chocolate and crushed graham cracker. Put the glasses in the freezer to stay cold and allow the melted chocolate to harden for about 5-10 minutes.
  3. While the glasses are chilling, make your double espresso shot. Once the shot is brewed, mix in the cocoa powder. Then add 1/2 cup ice to the glass. 
  4. Pour the creamy oat milk over the top of the iced espresso mixture. Top the drink with the delicious whipped marshmallow cream. Add crushed graham cracker and a drizzle of melted chocolate on top!
  5. Finally, enjoy this latte with a friend or as a dessert drink on a summer night!
